Introduction I grew up in Milwaukee where my first experience with beer was passing through Miller Valley and getting hit by the full nostril assault of macrofermentation. Luckily, I developed a more symbiotic with beer as I got a bit older. I started out on lagers when a buddy of mine got a job at a German restaurant and would bring home older bottles of Doppelbock that he'd bought for cheap from the bar. I can't say that I could've described the flavors that I was experiencing at the time, but I knew that there were a lot of them. I ended up getting a full beer education at the now defunct beer bar, The Borealis, in Dinkytown before heading off for a Grand Tour of Europe with Dublin and Vienna as my bases. I learned a lot about beer and wine from tasting what was around me and asking questions. But I found my knowledge grew exponentially once I started making my own beer, wine, and mead. I was able to not only identify the flavors better, but to recognize how they'd been created. Now every time I think I know something, I find a new direction that I can explore.
