| Introduction | I don't really like onions. I realize that this conflicts with my dreams of culinary grandeur because everything calls for onions. Really, I just make a paste of them, if I can. And I usually use maybe a third of what is called for. In my own recipes, I sometimes add onion for the benefit of other people. Surprisingly, I enjoy cooking with leeks, even though they are oniony. It's milder though. I do not feel the same way about shallots, they're too oniony. Don't even get me started on bell peppers... |
