Introduction Nalini Mehta has over ten years' experience in the NY food industry as a caterer, a cook (including at Candle Cafe and Hampton Chutney) and as an instructor at the Natural Gourmet Institute for Food and Health, Whole Foods Culinary Center and NY Open Center teaching Ayurvedic cooking. A vegetarian herself, complemented by her belief in Ayurveda and Ayurvedic cooking, Nalini views food and the cooking process as an experience that nurtures the mind, body, and soul
