It's a New Mexico thing, David. Not a New York thing. I'm an Idaho boy, born and bred but I did move my family down to Albuquerque for a year and a half. The green chile culture is proudly New Mexican. It refers to the fruit of the chiles grown down around Hatch. In fact it is hard to find a bowl of Texas style chili in the state, New Mexico chile is more like a beanless stew swimming with green chiles. Different, but good stuff. Bourdain ain't worth much, but I don't think you should fault him for the chile remark. Kind regards,
