Ellie, these bars sounds delicious, I was thinking of a dried apricots version. I have some fig jam, I was thinking if I can use that. Anyway, is a great cookie/breakfast bar :) Merry Christmas!

Mihaela, I haven't yet tried the apricot version, but I love apricots...dried or fresh:). I'm thinking it would be a nice flavor combination with the shortbread cookie base.

I used whole wheat pastry flour and 1/2 coconute oil and 1/2 butter. This is an awesome recipe, thank you so much for posting!

I was wondering if these had any likeness to a cereal bar or "Nutrigrain" bar... My kids love them but are so full of sugar and junk I was looking for a healthier alternative. Thanks for sharing this recipe, I'm definitely going to give it a go!

Javismimi, You know, I don't think it's that much similar to a cereal bar... to me, it has more of a soft buttery cookie, though I think if some whole wheat flour/oatmeal flour would be used it just might get closer to being a cereal bar. But I would try it once, see how you like it, and then adjust some of the ingredients to preference. For sure, I think it's much healthier than the store-bought version.
