This looks delicious! I've been looking for a good chicken pot pie recipe that didn't use roast chicken. How might I adjust the cooking time if I was to exclude the potatoes?

Lauren,
Thanks for stopping by...If you decide to skip the potatoes, you will just need to cook the vegetables until soft. Add the chicken and stir to combine. Then add the milk and slurry. Cook till thickened. Add the peas and taste for seasoning. You might want to add more chicken if you are skipping the potatoes.Top with puff pastry and bake as directed.

Yummy! I made your puff pastry and added cinnamon sugar to the leftovers and baked for a little treat. We paired the pot pie with 2 wines from a wine tasting class my wife and I are taking. The southern Australia chardonnay was best suited to the delicious dinner..Thanks!
