LDH, Thanks:)... I'm glad you like the idea. It's easy to make, and amazingly uses quite a bit of zucchini. The big zucchini I had was gone in no time:)

Wow Ellie,looks yummy! If you're running out of zucchini recipes,
I stumbled upon this recipe last year when trying to use up some yogurt and zucchini sitting in my fridge (http://allrecipes.com/recipe/zucchini-salad-with-yogurt-and-walnuts/).
It was a hit both times I made it, but I sauteed a tiny bit of garlic before cooking the zucchini to add some extra flavor. It's very refreshing on a hot summer day.

Oh, Sherry... Thank you SO much for sharing the link to the zucchini and yoghurt recipe. It looks and sounds absolutely fabulous! I am so excited to give it a try... I even have all the ingredients:). Love your tip on sautéing some garlic... Reminds me of a tzatziki dip. It's funny because I also felt I could have added garlic to both of these recipes... to boost the flavor some.

But thank you Sherry, for being kind... and taking the time to write and share such a great dish. Actually, I can hardly wait to try it tomorrow:). I LOVE the idea to add some nuts. Yum!
