I am definitely trying this bread very soon Ellie, probably tomorrow and will let you know how it turns out. I love using coconut oil, so I'll try that to see how it turns out and will let you know.

Megi, Coconut oil sounds like GREAT idea! Would love to hear how you like the bread and any changes you've made...I am sure you'll come up with a winning recipe:)

M Family, Well, a bit of butter on top sounds good:), but I do love eating it some cream cheese or soft goat cheese...or even a vegetable spread, like baba ganoush:)

Andrea, Thanks for stopping by....it's definitely a different type of bread...quite healthy.... and it would sort of balance out the eggs I enjoy eating on the weekend:)

Just got back from a trip to Portland, OR where I had flourless bread. Luckily found your recipe--just had the first piece. It is amazing!! I sprinkled a little Kosher salt on top with the sunflower seeds. Will definitely make this again. Thanks.

Tessera, You can probably just omit the oat bran and use a full cup of the almonds... instead of scant cup. I'm thinking it should still work. Hope you enjoy it...

Mi-a placut reteta asta, foarte mult! Sunt o canadianca din alberta, si locuiesc in romania cu familia mea. M-am bucurat când am găsit aceasta reteta si am văzut ca sunteți o românca si o crestina! Si noi suntem crestini.

Matt and Christina, I personally haven't tried it in a loaf pan yet, but it's definitely worth a try. You might not get as much browning... I'd love to hear if it works out for you.

I made this bread at the weekend and I thought it was really lovely. It reminded me a little of soda bread but even better. It is really easy to make too.

I'm going to try making it with soya bran instead of oat bran when my brother visits as he is gluten intolerant.

Anon, You are welcome! I am so glad you enjoyed the bread. You know, it does have a slight resemblance to soda bread... that crumbly texture and crust.

Yes, I think you can easily adjust some of the ingredients. It will be wonderful to bake this bread for your brother... so he too can enjoy a slice:).

I would like to make this bread as I don't eat grains anymore and am always looking for bread recipes without them. I did look at the original recipe and am curious to know why you changed it so much. Trial and error or ...?
Your proportions are quite different.

Hi Rene, I suppose I always like to change recipes somewhat... and make it my own:). But in actuality, I really didn't change the recipe much. Yes, I did end up substituting a bit of oil for some of the butter, but the rest is really my conversions from the grams/mls to cups and tablespoons... and the conversions were my own...just how I ended up measuring either using my scale at home or some online conversion. But it works:)...
Hope that helps a bit. Incidentally, I'll be sharing another GF bread in the coming week or so. It's based more on nuts/oats and has no eggs. Stay tuned:)...
