Hmmmm....that's a tough question. I imagine someone like you would find beauty and photo ops everywhere you go! Personally, I'm a Europe fan, but I suspect you would love Australia and New Zealand. go in their spring or fall - their summer is very hot and winter can be iffy.
By the way, congrats on getting the leave!!!!! Three is a charm!

New Zealand for sure. Nature lovers often say to split your stay there 1/3 North Island, 2/3 South Island.

Australia is a short hop away, so might as well, but it doesn't compare to NZ (plus it would be unbearably hot around the time you're thinking)

Otherwise the National Parks in western US. Ansel Adams' California? and road trip in the parks between Yellowstone and Grand Canyon.

I recently went to Ireland, very interesting light, you would love it.

Or there is always PEI!

If you are going to continue to cover Canada, perhaps you could visit where the economy is booming such as the Yukon. Maybe they will even grant you access to the diamond mines. I suppose this could be closer to the lines of photojournalism, but I am sure you could capture some cool content. Similarly, you could visit our oil sands, capture the concept of the winter ice road the the remote reserves, or the lifestyle of people who choose to live off the grid all over Canada.

Back in 1985 I had the privilege of visiting Iguazu Falls in S.A. They're higher than Niagara and stretch for about 5 km. I don't know what it's like now, but back then it was pretty raw. There was one low level hotel on the Argentine side and another on the Brazilian side. I remember seeing wild Toucans, Budgies, butterflies the size of dinner plates and much more. As a wildlife photographer, you'd think you were in heaven. That said, I don't think I've ever seen a bad photograph of New Zealand. Wherever you end up, it'll be a well deserved break from teaching.
