Now that just looks scrumptious - I could really go for some of that. Glad you had such a nice time with Toni. He sure sounds like fun to go explore with.
daddy used to make sausage but not deer meat, not sure what he used, when he was doing it i left home until he was done and did not eat it.. bob loves summer sausage, i buy it at Walmart... he would like this i am sure..
Always thankful for what we receive. Years ago, when my dad and brothers in law used to go hunting, we enjoyed this too. They sent the deer meat to our local butcher, who mixed it with spices and some pork to make the summer sausage. I just remember what a treat it was, with crackers and cheese. Sometimes mom would slice it up and heat it on the stove, served with hash browns and eggs - yum!!
My parents never did stuff like that. I think I missed a lot growing up.
Your sausage looks great!

Twenty-five pounds of fresh deer meat
with cure mix and spices

became many tubes of summer sausage.
We are grateful for the deer's gift.

With all the right spices, this is delicious. I like to slice it on a platter with some cheese and crackers for an appetizer for guests.

Can you freeze this? Or do you hang it somewhere to cure?

What a sense of satisfaction that must be, putting up your own meat! It's something I would like to do.
