Folks - be super careful with this recipe - it's prone to doing odd things. Make sure you simmer your syrup for a full five minutes - this allows the bi-carb to aerate the mix, plus it helps develop a deep chocolate colour. Also, mix the batter on a high speed on your mixer until it goes pale. I'd give it two minutes at the least, but taking it to three would be much better.
