Hi, I tried making this but it turned out more soft sticky caramel than fudge...I didn't rapid boil it as the bottom was already catching and burning even at the simmer I had it at. I was wanting to use the fudge just like planet cake does, for cake decorating, but its not firm enough to hold shape...any suggestions?

Lisa, I made this with the aim of using it like Planet Cake does too. I have found it really needs to live in the fridge, so it's not suitable for modelling. I've had to give away a kilo of it this week! I'm not sure how to tackle the burning as I also had the same problem. Might I suggest a low, low heat for a longer period of time? I'll do some testing and see if it changes anything. Petrina.
