The canning tools make a huge difference. Until you bought me that set I was doing it with a fork to remove the lids from the water, no funnel, and lots of little burns. The only real difference to my method now (other than your horrendously bastardised broth) is that I put in and take out my jars in sequence in the theory that they will all have roughly the same amount of time with hot water up to the rims and no down time waiting for me to fill other jars. Then it's just a constant cycle out and in until they're done. Also I don't think you're supposed to boil the lids, but simmer. I doubt it's a big difference, but pretty sure I read that it's better not to boil. And 15 mins is a minimum. I usually simmer/boil for at least 30 so the wax gets nice and soft for a deeper seal.

Your broth is truly a crime.

Seriously...water, tomato paste, olive & vegetable oil, salt&pepper and bay leaf...and stop. This broth soaks up the flavor of the vegetables and is the best part of the soup. It will taste a little bland and green until about 45 minutes in when it all melds together. It's a shame you are missing out on that part. It's very similar to the Procure's broth in Kigali.

Oh and one last thing, take the broken glass thing seriously. Inspect your jars. I've had a couple bottoms break out for whatever reasons, nice clean breaks all the way around. Luckily always in the pot of boiling water. I could imagine the hell if it happened during transition out of the pot.

P.S. your comments about Grandma VanBelle made me smile-she always added the leaves from the celery stalk- wouldn't throw away anything from her soup!!

enjoy the soup. grandma never canned her soup---nor did she use a recipe. regretfully because her soup was out of this world. other things she regularly used: barley, potatoes (you and danny don't use them--i like them in my soup)--and LOTS of celery, onion and garlic. today is a good soup say...great for when you're not feeling well
