Did loads over the weekend! Friday was check up day (weekly now! haha!) so it was long weekend for me haha. I managed to find butterscotch chips at Cold Storage Novena on the way back home from the hospital so I grabbed one packet! And just to prove that Cold Storage does carry the brand, I went to check at Northpoint as well and yay! Found them again!

Fetched my baby boy from my mum's and went home to make nasi goreng kampung which was a tad salty but the Husband said finally it has taste -_- Haha.

[Image]I couldn't get my hands away from the kitchen hence I made butterscotch oatmeal cookies as per the recipe on the packet. Started at like 6 and ended at 8. Yes. That crazy.

While the cookies taste oh-so-yummy, I had problems getting them off the trays as they tend to stick. Sigh. Very frustrating. Doesn't help that the cookies are brittle and thin. I'm kinda thinking of making another batch without using oatmeal, and hopefully it won't run as much. I had to scrape them off using the icing spatula and it made scratches on my pans! Grr.

These cookies are really not nice to look at, but I love the smell! It's chewy because of the oatmeal, and very sweet. I was thinking of fattening up my siblings with this batch, but I am keeping some for myself, and maybe can be served to guests also see how.

Oatmeal Scotchies

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon (though actually there's not much taste of it)
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
3 cups quick or old-fashioned oats
Combine flour, baking soda, salt and cinnamon in small bowl.  Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl.  Gradually beat in flour mixture. Stir in oats and morsels.  Drop by rounded teaspoon onto ungreased baking sheets. (Bluff one!! It'll stick!!) Bake for about 12 to 15 minutes at 180 degrees Celsius. Saturday we broke fast at home, and as a treat for the Husband I made beef rendang and begedil.

Sunday morning I made a second batch of pineapple tarts, this time to be given away, half to my parents half to his parents. I tell you this nesting thing thus far has turned me into a kitchen warrior instead! And I don't get tired from it all.

So yes baker warrior me shall head down to Cold Storage after work today, get some butterscotch chips and butter, try this recipe and hope it turns out like in the photo.
