I have three green apples leftover (granny smith? Can't remember) and what better way than to turn them into apple cake!
And it was the best fruit-to-cake decision thus far. There was a weird one I tried before, jackfruit cupcake and I have some longans at home and I'm thinking of some longan dish but since longans are more difficult to pit, so I left it as that.

Anyway! Apple cake. I was in the kitchen and lazy to google some recipes, so I checked my two cake recipe books and settled for apple cake by Tish Boyle. The original recipe has more spices and maple cream cheese frosting which would be ultra yummy but I skipped that. I didn't follow the batter-making process either, I just added as I go.
Apple Cake/Cupcake
150g butter, softened (recipe says 116g but I was lazy to accurately measure)
1 cup brown sugar, compressed
4 tbsp sugar (I added cos I thought the batter wasn't sweet)
6.4 oz flour (I used 6-ish, 7 not very sure)
1 tsp vanilla essence
1 tsp baking powder
1 tsp cinnamon powder
2 eggs
1 cup buttermilk (recipe says 2/3 cup)
3 apples, skinned and chopped into 1/3 inch cubes (recipe says 2 apples but no harm adding more fruit!)
1 cup coarsely chopped walnuts
Cream the butter with the brown sugar with a wooden ladle. Make sure all the sugar lumps are crushed.
Mix the dry ingredients together, flour, baking powder and cinnamon powder.
Add in eggs and whisk till mixed.
Add in flour mix and buttermilk alternately, ending with flour. But then again I don't really know if not following this step produces something else.
Finally, add in the apples and walnuts, mix till coated and transfer to a baking pan or cupcakes. I got exactly 6 big cupcakes and 8 mini cupcakes!
Bake at 180 degrees Celsius for about 30 minutes. It was done by 25 minutes or so but I wanted the crust to have a little crunch :)
The smell of apple cinnamon baking is just so yummy! These darlings are good to eat warm, but I just had some just now in my cold office and it's still delicious. The cake's sweetness is just right (although Husband says it's not sweet), the apple chunks add a juicy bite, and the walnuts added a nutty crunch. Some say the nuts are optional but no! They are a must!

Apple walnut cupcakes are by far my most favourite of all fruit-infused cakes! I might just buy another batch of apples just to make these again!
