I take all my models outside for spray varnishing but cold weather (and rain) test my resolve to the limit. If the weather is very bad I remove myself to the porch. I shut the inner door to stop fumes getting in the house (annoying Mrs BigLee), open the front door for ventilation and work there... although I do get a few weird looks from the neighbours.
One good thing about living in Australia is that we don't get a lot of rain usually. I've never had any trouble with spraying thank God, my limited skills could not handle it.

This is not exactly varnishing "Best Practice", but when I have a tight deadline to meet I find I can usually get away with gloss varnishing even at night. NEVER try this with a matt varnish!
They are the last 32 minis for my recruit legion, fresh from the brush of Nick Speller, and I need them finished and based by the 20th for a game...

I once sprayed some minis with gloss lacquer, outside, and noticed 10 minuted later that it was raining heavily. They were fine!

Hi BL, gloss lacquer and Dullcoat are both incredibly vile-smelling! A porch or shed would be very useful.

If the weather is very bad I spray inside and escape the room after I notice that it is definitely not a bright idea...
