I was a veggie for a couple years back in college and more recently for a few months, but then the delicious turkey holidays of thanksgiving and christmas made me weak in the knees and I abandoned the cause :( I do try to moderate my meat intake though and make a point to buy organic/free range meat which I suppose in the grand scheme of things might not matter because they are still dead on my plate. ANYWAY, even though you and I are not students, the "Students Vegetarian Cookbook" by Carole Raymond is a good cookbook. It doesn't use a lot of "weird" ingredients like seiten or other weird and mysterious meat substitutes. I've made a handful of the recipes as was pleased with all but one. Nava Atlas also has some good cookbooks, I like her 'family' vegetarian cookbook because it has lots of great vegetarian/vegan baking recipes. That's enough rambling from me, you already know I'm a crazy dog lady, I don't need to be known as a crazy rambling lady either!
