1 3/4 cups All Purpose Flour2 tsp Baking Powder1/2 tsp Salt1 cup Sugar4 Eggs2 tsp Orange Zest2 tsp Lemon Zest2 tbsp Balsamic Vinegar2 tbsp Whole Milk3/4 cup Extra Virgin Olive Oil2/3 cup Sliced Almonds (toasted)Powdered Sugar (optional)
Directions: How to make muffins with olive oil
1. Preheat oven to 350 deg F. Prepare 12 cup muffin pan. Best to use non-stick type.
2. In a medium mixing bowl, add flour, baking powder and salt. Mix well.
3. In a separate mixing bowl, sugar, eggs, orange and lemon zests. Use a hand mixer to beat until light and fluffy.
4. Add vinegar and milk. Continue to beat.
5. Add oil and keep on beating.
6. Add flour mix and stir manually until blended. Crush almonds and add. Continue to stir until mixed.
7. Fill the muffin pan with batter. Bake for 20-25 minutes until golden on top.
8. Remove from oven and allow to cool for 10-20 minutes.
9. Remove muffins from pan and garnish with powdered sugar. Serve and enjoy!
