What Kind Of Rice For Egg Fried Rice?
I love fried rice. It's so easy to make at home. In order to make fried rice properly you have to make sure to use DAY OLD COLD white rice.
This particular recipe uses cooked chicken, but I have another recipe for beef fried rice. By "cooked chicken", I mean that you cook the chicken any way you want ahead of time. So boiled, steamed, roasted or baked as you prefer. For this serving, I use day old roasted chicken from a local supermarket.
Easy Chicken & Eggs Fried RiceIngredients:
2 tbsp low sodium soy sauce1/2 tsp sugar1 tbsp vegetable oil2 eggs, well beaten1 1/2 cup chicken, cooked & cubed/sliced/shredded1/2 cup frozen peas and carrots1 tsp. fresh ginger, minced1 clove garlic, minced2 cups cooked whited rice, day old
Directions: How to make chicken egg fried rice
Step 1. Heat vegetable oil in a wok or medium skillet. Add eggs, scramble and set aside.
Step 2. Add a little more oil in the wok and stir fry peas, carrots, ginger & garlic. About 3-4 minutes.
