This recipe is for brownies and I'm using olive oil as well. Some bakers might frown upon the use of olive oil, but to me, it's a matter of how you want your end product.
Olive oil tends to make your baked goods more moist than usual. This is because olive oil is liquid in room temperature. For the most part, you can substitute olive oil for vegetable oil at 1:1 ratio. Hence, brownies will be fudgier and denser than if it was made with butter.
Let's keep in mind that olive oil gives baked goods, including brownies, a fruitier flavor. It's something to get used to but you can also find a more neutral, therefore, more suitable to your taste olive oil.
In any case, olive oil is healthier than other baking oil including butter. Among others, it has anti-inflammatory properties, can help prevent strokes and can help against heart disease.

3/4 cup granulated sugar1/2 cup olive oil2 eggs3/4 cup melted chocolate1 tsp vanilla extract1 tsp instant coffee2 tbsp hot water2/3 cup all purpose flour1/8 cup cocoa powder1/4 tsp salt
Directions: How to make olive oil brownies
1. Preheat oven to 350 deg F. Prepare a 8x8-inch (or 9x9) baking pan with parchment paper.
Make wet ingredients---
2. In a large mixing bowl, add sugar, olive oil, eggs, melted chocolate and vanilla extract. Mix well using a hand mixer or manually.
3. In a cup, mix hot water and instant coffee. Add to the large bowl and continue mixing till smooth.
