I tend to doodle shapes and symbols. But I used to have a co-worker who would draw huge sprawling landscapes and horses. Sometimes horses with wings, sometimes not so much. They kind of looked like Napoleon Dynamite style illustrations, actually.

Reference librarians. As animals. One looks like a turtle and another is the spitting image of an owl... well, thankfully she got new glasses recently, but she sure did.

I doodle dead horses. I then I doodle my coworkers beating the dead horses. But now I have an iPod Touch. I will now be surfing the web like Anon. So much for that art career.

My doodles are usually abstract in nature but I've done the Pac-Man thing across the tops of my pages, complete with ghosts.

Errand lists and figuring out weekly work-out schedules also work.

I generally draw pirate-y things: skull and crossbones (with little bows), ships, etc. When that fails, I make up my own word games. How many words can you make from the word pointless; nincompoop; quitting?

As a former teacher I draw mind maps. I taught second graders 5 of them so I have quite a chioce.

At the last librarians meeting, I drew a stick figure with its mouth wide open and noxious fumes coming out (squiggly lines, actually) then tons of sad faces surrounding this. Yes, we have it bad at our librarians meetings but no one has the guts to pass the constantly talking Queen of Halitosis a breath mint or a business card of a dentist. sigh.
