Introduction	As a stay-at-home mom with a two-year old son, cooking quick and healthy food is a priority of mine. I grew up in Michigan, and moved to Georgia for a few years after college. I then lived in Northern California for 8 years. Most recently, I moved overseas to Amsterdam where my family and I lived for a year and a half. We now live in Denmark. The point is this...my cooking has evolved as I've experienced new places and new foods over the years. I have Mid-West roots, so still like a good casserole recipe :) I learned many Asian and Mexican recipes in California. And Europe...well that has taught me to think about food completely differently than I'm used to. I hope the recipes I post reflect what I've learned from it all :)
