About Me

Cooking professionally for over 25 years, he started as a dishwasher for an unruly German master Chef in Norwalk CT. “Wolfgang could fling a sauté pan into the sink from fifteen feet! But one thing he taught me was to step back and look at the platters.” After seeing his first mega yacht, a local crew agent told him: ‘Those chefs are Cordon Bleu certified’. Arriving home from a trip to Panama, he arranged to leave the following day for London and ten weeks of rigorous old-school training. “Mean old men.” His interest in studying classic cuisine has brought him to The Royal Thai Culinary Institute in Bangkok and numerous courses in Italy studying Tuscan and Ligurian styles. Entering his thirteenth year as a mega yacht chef, Jim is highly regarded in the private and charter yacht industry. He has cooked for world class entertainment and sports personalities as well as heads of state and well known business leaders. This work has taken him on trips through the Caribbean and Mediterranean from Gibraltar to Greece and beyond. Living on his wooden yacht in South Florida, his pastimes include biking at Hollywood Beach and playing his Martin 0042K2 guitar.
