Introduction Give vines the best soil, plenty of water, perfect conditions, and let them grow as they like. The harvest will be small; the resulting wine, mediocre at best. Give the vines poor soil, make them work to survive, and train them up tall away from the ground. Now you have the making of something remarkable.
