Introduction	I don’t like having things. I like making things. This idea, along with the principles of the slow food movement, using sustainable, organic and local products to create food that is nourishing to us and responsible to our environment are the guiding force in my life and in my cooking. After attending culinary school in 2001, I used the know-how I gained there to bring the techniques of healthy cooking to the people around me.
