| Introduction | I'm a mommy to a little boy who is about to start preschool, TOMORROW, 1/18/2011! My, how time flies! Growing up I remember how boring my daily school lunches were. It was practically the same thing everyday. A peanut butter and jam sandwich (back then we didn't know many kids who were allergic to peanuts), a bologna, or tuna fish sandwich, probably some potato chips and I'd buy milk from school. All this packed in a brown paper bag from the grocery store or my tin 'Little House on the Prairie' lunchbox. By this time I think Strawberry Shortcake was all the rage but whatever. I remember having to pack my own lunch while I dreaded making it let alone eating it at lunchtime! I want my son to have something special to remember. When he sits down for lunch during mid-day, I want him to have a comforting lunch made with love by his mommy. I know this may be a huge feat since I am expecting baby #2 ANYDAY now, but it's important to me for him to have this memory and he's only this age once. So call me crazy but here's my attempt.
