Introduction As a little kid I'd watch my dad clank around in the kitchen making all kinds of concoctions. Every Christmas along side the Turkey and Yorkshire puddings was a mound of steaming stuffing. Year after year it was different, made with things like leftover corn chips, dates, and stale bread. But, no matter what my dad put in the mix, it always turned out great. When I was about 15 I used to make omelets for my mom and she would graciously give me her honest opinion and then gobble them up. What a great mom! I think that's when my love for cooking really began. Now I enjoy making meals out of "must-go" ingredients, the ingredients left in the fridge that must go before they go off. I also like cooking with a near bare pantry, challenging myself to come up with something healthy and tasty using minimal ingredients and a few basic dried goods, like some kind of whole grain. My courageous husband, Marco, and daughter, Chloe, are my guinea pigs, tasting all of my concoctions. Thank you!!! (you haven't gotten sick yet!)
