color: rgb(0, 153, 0);"&gt;INGREDIENTI&lt;/span&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;500 g di farina 00&lt;/li&gt;&lt;li&gt;25 g di lievito di birra&lt;/li&gt;&lt;li&gt;70 g di strutto (oppure olio d'oliva)&lt;/li&gt;&lt;li&gt;1 cucchiaino di zucchero&lt;/li&gt;&lt;li&gt;100 ml di acqua&lt;br /&gt;&lt;/li&gt;&lt;li&gt;sale&lt;/li&gt;&lt;li&gt;olio per friggere&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-weight: bold; farina q.b.&lt;/li&gt;&lt;li&gt; sale&lt;/li&gt;&lt;li&gt;pepe&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-weight: bold; color: rgb(51, 51, 255);"&gt;Procedimento:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Metti in forno su di una teglia rivestita di carta forno circa 6 melanzane, girale di tanto in tanto e tienile sino a quando la pelle apparirà più scura e tale da poter essere rimossa con facilità.&lt;br /&gt;A questo punto spegni il forno e quando le melenzane sono più fredde pelale indi lasciale colare in un colapasta per molte ore.&lt;br /&gt; color: rgb(51, 51, 255);"&gt;Procedimento&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Ripulire le sarde da eventuali altre spine e dalla pinna dorsale, tritatele con il tritacarne indi impastare (come si fa per le polpette di carne) con le uova ed aggiungere il pangrattato, i passolini e i pinoli, lo spicchio d'aglio tritato, i semi di finocchio selvatico, il sale, il pepe e il prezzemolo finemente tagliato. Con il composto ottenuto, formare delle polpette di media grandezza passarle nella farina e friggere in olio bollente. Preparare un sugo di pomodoro non denso (con la passata, la cipolla, il basilico o la menta) ed immergervi le polpette.
