tag:blogger.com,1999:blog-8074577474158093010.post-45945421555812832322007-10-18T06:00:00.000-04:002007-10-19T06:22:42.946-04:00<b><i><font size="6">'Nana Nut Muffin</b></i></font><br /><br /><b><i>Snack:</b></i><br />you need-<br />1 1/2 cups all-purpose flour<br />3/4 cup sugar<br />3/4 cup walnuts, coarsely chopped<br />1 1/2 teaspoons baking soda<br />1/4 teaspoon salt<br />1/2 cup walnut or canola oil<br />1 large egg<br />2 or 3 medium to large very ripe bananas, slightly mashed to about 1 1/4 cups<br />2 tablespoons buttermilk<br /><br />Preheat oven to 375 degrees. Grease 10 standard muffin cups; fill the unused cups one-third full with water to prevent warping! Stir together the flour, sugar, chopped walnuts, baking soda and salt in a bowl. In a different bowl, whisk together the oil, egg, mashed bananas and buttermilk until blended. Add the dry ingredients and beat well until evenly combined and creamy. Spoon batter into each muffin cup, filling it even with the rim of the cup. Bake the muffins until they're golden, dry, and springy to the touch.
