For the truffle filling, in a saucepan, bring 2/3 cup cream to a simmer. Place the 6 ounces chocolate chips in a bowl and pour the hot cream over the chocolate. Let stand for 1 minute, then gently whisk until smooth. Spread truffle filling over the bottom of the prepared piecrust. Freeze for 20 minutes.<br /><br />2. Meanwhile, for the whipped chocolate filling, in a double boiler, heat the 6 ounces chocolate chips with 1/2 cup of the cream until the chocolate is just melted, stirring often. Let cool to room temperature. In a chilled bowl, beat the remaining 1 cup cream until thick. Add the chocolate mixture and the vanilla and beat until soft peaks form. Spread the whipped chocolate mixture over the truffle filling in the crust. Refrigerate overnight.<br /><br />3. Just before serving beat 1 cup heavy cream until it begins to thicken. Add powdered sugar and whip until stiff peaks form. Spread the whipped cream over the top of the pie. Using a grater or vegetable peeler, make pieces or shavings of milk chocolate, white chocolate, and semisweet or dark chocolate for decoration. Garnish pie with chocolate pieces. Preheat the oven to 350 degrees F.</div><div><br /></div><div> 2. Cream together the butter and sugars until will blended and light in color.</div><div><br /></div><div> 3. Add the egg and the peppermint extract until will blended. (Scrape down the bowl halfway through.)</div><div><br /></div><div> 4. Whisk together the flour, baking soda, baking powder, salt and cocoa powder. Using a small (1") scoop, drop dough onto a baking sheet lined with parchment paper. Bake for about 10 minutes (cookies should still look a little shiny, or 'damp').  (not the white baking chips you might be used to!)<div><br /></div><div>-----</div><div><br /></div><div>WHITE CHOCOLATE RASPBERRY CHEESECAKE</div><div><br /></div><div><span class="Apple-style-span" style="font-style: italic;">ingredients:</span></div><div>  1 cup chocolate cookie crumbs</div><div>  3 tablespoons sugar</div><div>  1/4 cup butter, melted</div><div>  --</div><div>  1 (10oz) package frozen raspberries</div><div>  2 tablespoons sugar</div><div>  2 teaspoons cornstarch</div><div>  1/2 cup water</div><div>  --</div><div>  2 cups chopped (good-quality) white chocolate</div><div>  1/2 cup half &amp; half</div><div>  --</div><div>  3 (8oz) packages cream cheese, softened</div><div>  1/2 cup sugar</div><div>  3 eggs</div><div>  1 teaspoon pure vanilla extract</div><div><br /></div><div><span class="Apple-style-span" style="font-style: italic;">directions:</span></div><div>  1.  Mix together crumbs, 3 tablespoons sugar and melted butter.  Press the mixture into the bottom of a 9-inch springform pan.   Wrap the outside of the pan well with 2 layers of aluminum foil, to help prevent leaks, and place in a roasting pan.</div><div><br /></div><div>  2.  In a saucepan, combine the raspberries, 2 tablespoons sugar, cornstarch and water.  Bring to a boil and boil for 5 minutes, or until the sauce is thick.  Strain through a mesh strainer to remove seeds.</div><div><br /></div><div>  3.  Preheat oven to 325 degrees F, and set some water to boil for later.  In a double boiler, (or a glass bowl set over a pot of simmering water - making sure the bottom of the bowl does not touch the water), melt the white chocolate with the half &amp; half, stirring occasionally until smooth. </div><div><br /></div><div>  4.  Mix together the cream cheese and 1/2 cup sugar until smooth.  Beat in the eggs, one at a time.  Blend in the vanilla and melted white chocolate.  Pour half of the batter over the crust.  Spoon 3 tablespoons of the raspberry sauce over the batter.  Pour remaining cheesecake batter into the pan and spoon another 3 tablespoons raspberry sauce over the top.  Swirl with the tip of a knife for a marbled effect.</div><div><br /></div><div>  5.  Place the cheesecake (set in the roasting pan) in the oven and fill the pan with boiling water about half way up the side of the springform pan.  Bake for 55-60 minutes, or until it is almost set in the center, then turn the oven off and let the cheesecake sit in the oven for another hour (the purpose of this is to help prevent sinking and cracks, which do not affect the flavor, but the beauty of the cheesecake!).  Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from the pan.  Serve with remaining raspberry sauce and fresh whipped cream.</div><div><br /></div><div>**This recipe is a great make ahead dessert, as it keeps well, and gets better as it chills for a day or two! Surgery was a lot mor difficult than I expected, but it's over now, so it can only get better from here, right?! :o)<br /><br />I ended up spending 2 nights in the hospital as the pain was unmanageable the first day and I wouldn't have been able to make the 3 hour drive home. I was so glad to just be in one spot and able to keep taking pain meds and having help! And Andrew was glad to not have to deal with all that care by himself!<br /><br />Thursday I was able to go home, and I am so happy to be here! Pain is still intense, but manageable if I stay on top of it, and the hardest part is just having to sit still! It's hard not to be able to clean and keep on top of things in my own house! I'm trying to learn patience... :o)<br /><br />We have some wonderful friends and neighbors that have been helping us out with meals and picking up Navy from school, and we are so blessed to have them all in our lives! I am having surgery on Tuesday to fuse some bones together in my left foot, and am a little nervous. I think the hardest thing is the fact that I will not be able to work for at least 6 weeks. We sure do depend on my little salary to help make ends meet! <br /><br />Crutches for at least 6 weeks and a walking cast for 6 more. I'm going crazy just thinking about it! I've got a ton of books stacked up to read, and I've cleaned so much this past week that I just might be ok with not cleaning for a few weeks. :o) Let's just hope the boys don't do too much damage when I can't chase after them and keep things picked up!
