I know I do.<br /><br />Dinuguan is a popular favorite throughout the Philippines. It is usually paired with soft fluffy rice cakes but I prefer it over hot rice. I also like Dinuguan that is thick, spicy and on the sour side.<br /><br />I have never tried cooking the dish, though. I usually order it from restaurants that specialize in Filipino dishes.<br /><br />If you're daring enough to try making Dinuguan at home, here's a recipe I unearthed.<br /><br />Ingredients:<br /><br />3 cups cubed pork (with fat)<br />1 1/2 cup pork blood<br />1/2 cup vinegar<br />1 cup water<br />1 tablespoon salt<br />3 tablespoons cooking oil<br />3 cloves garlic, peeled and crushed<br />1 medium onion, peeled and sliced thin<br />1 green hot chili, chopped<br />1 green hot chili, whole<br /><br />In a deep pot mix vinegar, water and salt with the pork cubes. Bring to a boil and then reduce heat. Cover and continue cooking for one hour till pork is tender. Check regularly and add a little boiled water if you notice it getting dry.<br /><br />In a separate pan, heat the oil and saute garlic and onion. Transfer this mixture to the boiled pork pot. Add the pork blood slowly, stirring all the time. Bring to a boil again. Add the chopped and whole green chilies. Simmer for a few minutes uncovered until the sauce is reduced to the consistency you prefer. Of course there's a cliff and, better yet, it can be climbed by its steps.<br /><br />There are no crowds nor noisy and nosy vendors around. Only you and the sand and the surf. During the day, the sun warms you and at sunset it awes you with its beautiful colors.<br /><br />Still within easy reach, however, are great resorts and individuals bungalows expertly kept private by shielding trees. Also there for your convenience is a restaurant at the top of the cliff. Not ready to give up your isolation for the day? They will willingly lower your meal in a basket. If you wish to remain on the beach till evening, they can also arrange a private dinner beside a camp fire on the sand.<br /><br />Go swimming or, better yet, go snorkeling to marvel at the coral garden under the sea.<br /><br />You can sail to Balinghai Beach from Boracay's White Beach, or vice versa. Alas for retro fashionistas, puka shells are a rare find these days and picking them off the beach is no longer allowed.<br /><br />That should not dampen the spirit of vacationistas, though, because Puka Beach still has much more to offer.<br /><br />Its fine sand is known to be heavenly to walk on barefoot, thus, its other monicker as Yapak Beach. Yapak in Filipino means bare feet.<br /><br />The 800 meter long Puka Beach is the second longest beach in the island, ending in the rugged Lapuz-Lapuz cliffs.<br /><br />Located at the northern tip of Boracay, this beach is quieter than most, with few vendors to be seen. This is where commerce and spirituality meet, strange bedfellows that they are. Traders and shoppers flock to the Quiapo Market and the surroundings of the Church while devotees visit the Church regularly to hear Mass, say their novenas and light candles for petitions.<p></p> <p class="MsoNormal"><o:p> </o:p></p> <p class="MsoNormal">January 9 is the most important day for Quiapo for it is the Feast of the Black Nazarene, its patron. No wonder it is called the Pearl of Mindoro.<br /><br />Puerto Galera also has several beautiful beaches, spectacular dive sites and breathtaking coral reefs. It is the perfect place for swimming, snorkeling and scuba diving. You will find accomodations of every kind for every budget in each of the beaches.<br /><br />Most popular among the local people is White Beach with its numerous commercial establishments. Tourists, on the other hand, favor Sabang Beach and its nightspots.<br /><br />There is a beach named La Laguna and a bigger one named, incredibly, Small La Laguna. The former has several resorts and water sports facilities. The latter is beside Sabang Beach and has many dive shops that rent out diving equipment.<br /><br />For a quiet retreat, Punta Guarda Beach and Talipanan Beach are recommended.<br /><br />There is a total of 16 dive centers in Puerto Galera, with each one having about 25 dive sites. The water currents are strong so make sure to be accompanied by experienced divemasters or instructors.<br /><br />Another attraction of Puerto Galera is the 423-foot Tamaraw Falls. Hikers and mountain biking enthusiasts can also enjoy the Adventure Mountain Trail, a two-to-three-day walk along the Tabinay-Talipanan Trail, crossing three mountains and ending on the white sands of Talipanan Beach. Yes, locals and tourists alike can't have enough of the white sand beaches of Boracay Island.<br /><br />Since April and May are the months when Philippine schools are on summer vacation, these are also the most festive months in Boracay.<br /><br />Boracay's white sand is known to stay cool even under the hottest midday sun. This perfectly complements its waters, always the bluest blue.<br /><br />Boracay boasts several beaches. The main and most popular one is called White Beach. No other name seems more apt.<br /><br />For windsurfing or kiteboarding, Bulabog Beach is recommended. You can even get lessons there. It has been the site of the annual Boracay International Funboard Cup since 1988. This has been made an official leg of the Asian Windsurfing Tour.<br /><br />Windsurfing peaks during the first months of the year, though, while kiteboarders prefer to wait<br />for the southwest monsoon in June and July.<br /><br />The more quiet beaches are Balinghai, Puka, Tambisaan, Tulubhan, Ilig-Iligan, Punta Bunga, Bunyagan, Cagban, Manoc-Manoc and Diniwid. These are perfect for picnics and for lazing around.<br /><br />Those who crave more activity aside from water sports can play golf at the world class 18-hole par-72 Fairways &amp; Bluewater Golf Course.<br /><br />You might also want to explore the Dead Forest and the Bat Caves, or hike up Boracay's Mount Luho.<br /><br />Don't worry about your budget, accomodations or food. There is something for everyone. You can choose from the most basic huts and rooms to the most decadent villas and hotels, with a wide range in between. There are restaurants and bars of every kind. There are even shopping places for almost anything you need.<br /><br />At night, you can choose to be secluded or join the all night dancing and partying on the sand.<br /><br />The dress code is simply beach casual. Many people prefer to walk barefoot on the powdery soft white sand.<br /><br />No wonder Yahoo! Travel has named Boracay Island as the seventh of the World’s Best Beaches in June 2007. Those who are leaving the Philippines are also expected to bring something to relatives and friends back home especially if they are Filipinos, too. Again, as I said in my previous post, this is meant to be a gesture of affection or goodwill and should not be made into a burden. You do not have to spend for excessive gifts.<br /><br />Pasalubong is usually expected to consist of food or souvenirs representing the country. If you choose to bring out local delicacies, do check first whether these are allowed into your country lest they be confiscated at your port of entry. Also check for expiration dates, especially of pastries and candies.<br /><br />It's safer to choose small luggage-friendly souvenir items. These are widely available at Filipiniana departments of stores. There are even specialty stores selling only such items. Refrigerator magnets and paperweights are popular choices. Inexpensive t-shirts and canvas shopping bags are also useful.<br /><br />For your female relatives and friends, I highly recommend real freshwater pearls. These are unbelievably inexpensive here in the Philippines and ladies of all ages will always appreciate pearls. They are available in various sizes, shapes and hues as stud earrings, necklaces and bracelets. You can get a pair of earrings or a bracelet for less than a hundred pesos. That's less than US3D!<br /><br />They say you can get freshwaterpearls at their cheapest at Quiapo, but since I've never been to the pearl suppliers there I can only recommend Greenhills or Market! Market! You can get many other good buys in these last two places, too. It's even used to mean a treat brought home at the end of the day. This is another example of how affectionate Filipinos are as a people.<br /><br />Unfortunately, pasalubong can sometimes become a burden. This is especially true for those coming in from abroad. Somehow,they are expected to bring in pasalubong for everyone, not only for the immediate family but even other relatives and neighbors. Family members sometimes even have the gall to ask for expensive designer items, as if the one coming home has an unlimited budget.<br /><br />It's sad that many Filipinos coming home are actually pressured by this mentality and give in to expensive requests, going out of their way to please everyone. For some, it becomes a matter of pride or saving face, as if not bringing the expected pasalubong would mean they had somehow not achieved enough. For others, it's simply a matter of embarassment.<br /><br />I always advise friends and relatives not to give in to this pressure. Bring in pasalubong if you must, but stick to inexpensive tokens of thoughtfulness. You don't have to break your budget. Never mind the expectations and don't get embarassed. The ones expecting you to bring them expensive gifts should be ashamed instead.<br /><br />Some balikbayan Filipinos, especially those who haven't been home in a long while, also tend to bring home items that are widely available here anyway. It has even become a running joke that you will know a balikbayan by his or her boxes of corned beef and other US canned goods.<br /><br />I know that most Filipinos, especially those who have made good abroad, sincerely want to share their blessings with those here at home. You are very welcome to do so, but perhaps it would be more productive if you first assess the situation of your relatives here and then decide how you can best help them. Each subject has a certain number of modules per year level. These modules contain both lessons and exercises to be worked on by the student. After finishing a module, the student reports to school to take a Mastery Test. If he fails to get a satisfactory score, he has to take another test with a different set of questions on the same module. He does this until he passes the module. After half the number of modules for a subject has been passed, the student is given the first Achievement Test. After passing this, he proceeds with the rest of the modules and their mastery tests, and is then given the second Achievement Test. He needs to pass the second Achievement Test to be considered cleared for that subject for that year level.<br /><br />The student has a choice on how to tackle his subjects for the year. He can opt to concentrate on one or two subjects until cleared before proceeding with the others, or he can take all subjects simultaneously a little at a time.<br /><br />Students report to school for the tests twice a week, and they get to choose the day of the week from Monday to Saturday. Some hands-on subjects - like Speech laboratory, PE, home economics and drafting - are scheduled on Saturdays by batches.<br /><br />When home study students report to school, they come to a large room where teachers' tables are arranged against the walls. All year levels report here and a teacher is assigned to each subject of each year level. They approach the teacher and submit their finished modules for checking. If the work is satisfactory, they are given a permit to take a test. They proceed to the testing area and give the permit to the proctor. They are then given the test indicated in the permit.<br /><br />The setup allows interaction with students of various year levels. We found this appropriate to our children because they usually find themselves more compatible with those who are older than they are. Friendships are, therefore, not limited to age groups.<br /><br />It is a good system for those who cannot attend regular daily classes due to some illness. We found that with less stress from daily travel to and from school (with Manila traffic and pollution) our children's health has improved much. <br /><br />It is also a good system for a child to find his own natural learning style. The child can even progress more rapidly in less time, as compared to the traditional system. Conversely, this allows the child to spend more time on subjects that are more challenging to him.<br /><br />I wouldn't recommend the home study program if a parent or another responsible adult cannot stay home to guide the child's studies, though. In our case, there is very minimal supervision - the kids love being independent - but they do have questions from time to time. <br /><br />Our eldest went though the home study program from elementary to high school and is now doing very well in her third year in college. The system has prepared her to manage her time efficiently. Yes, Filipinas are sexy. But their beauty is not only skin-deep. And they are sexy not just in the physical sense. Filipinas may look fragile but they are strong, courageous, capable and resilient in the face of crisis and challenges. They are keenly intelligent and value learning and education. They are discerning and wise. They are confident and forward-thinking even as they are modest. They have dignity. They are naturally and sincerely caring for their fellowmen, and cherish friendships. They love deeply and passionately, and treasure family above all else except God.<br /><br />Yes, the beautiful and sexy Filipina is indeed worth looking for. But no, you will not find the real Filipina in smut and porn sites. And you will not be doing her justice if you think that all there is to her is in the lists sold by mail order bride sites.<br /><br />If you are looking for the real Filipina, look for the real person behind the image. Look for the unique individual proudly carrying the heritage of her people. Increasingly, children are also being placed in preschools and college graduates are going into post-graduate studies.<br /><br />Children are often accepted into first grade at 6-7 years old.<br /><br />Preschools, therefore, usually accept students from 3-6 years old, classifying them in age-specific levels. The levels vary - some use the terms Toddler Class, Junior Class and Senior Class. Others use the terms Nursery, Kindergarten 1 and Kindergarten 2. Sometimes the Kindergarten level comes before the Nursery level.<br /><br />There is no hard and fast rule and no set curriculum for preschools. In general, children are expected to recognize and write the alphabet, write their names, do basic counting, recognize colors and color drawings within the lines. Better preschools teach the children how to read and write words and simple sentences and do simple math, as well as acquaint them with the basic science.<br /><br />Preschool is largely affordable only to the middle class. Others send their children straight to Kindergarten at public schools at the age of 6. That is if they could afford the transportation fare and daily food allowance.<br /><br />Public school education is free from elementary to high school, but food is not provided. Transportation and school supplies are shouldered by the students, as well. This is beyond the reach of many, and there is always a large number of out-of-school youth.<br /><br />Elementary school spans seven years, from Kindergarten to Grade Six. Those who passed through preschool usually qualify to go straight to Grade One.<br /><br />Some private schools have Grade Seven. This is not very common, though.<br /><br />High school takes four years.<br /><br />Aside from the many public and private elementary schools and high schools, there are also a number of International Schools following the American Educational System, from the curriculum and grade levels to the schedule of terms. These are quite expensive and cater to children of expatriates as well as the moneyed class.<br /><br />College courses, in general, also take four years. Some courses may take longer, e.g., Engineering. Law and Medicine require having a four-year bachelor degree before application. Law then takes another four years and then the bar exam, while Medicine takes five more years and the medical board exam.<br /><br />Nursing is currently the most popular choice not only for college freshmen but also for those seeking a second degree. Many doctors are even taking up Nursing just to qualify for job openings abroad.<br /><br />Graduate school is sparsely populated. June is not a particularly popular month to get married in here.<br /><br />Perhaps June weddings are favored in other countries because it happens to be summer there. The weather is good even for outdoor celebrations.<br /><br />The opposite is true in the Philippines. June means rainy weather. Not particularly compatible with white wedding gowns.<br /><br />June also happens to be school opening in the Philippines. Families have their budgets geared toward tuition fees and school supplies. Again, not a good time to spend for a wedding. Also not a good time to expect nice gifts from your guests.<br /><br />Ironically, December is the most popular wedding month here. This should be puzzling since Christmas is also big spending time for Filipinos. You are expected to give gifts to family, friends, officemates and a lot of godchildren. So why add wedding expenses to that?<br /><br />Oh, ok - I, too, got married in December. I guess it's the spirit of the season permeating everything during that month. Everyone is in a loving, giving mood. It's a time for gatherings and celebration. Everything seems magical!<br /><br />And yes, most everyone gets a Christmas bonus, too :D<br /><br />So if you're expecting a lot of June brides in the Philippines, you'll be disappointed.<br /><br />I'll be tackling many other aspects of Philippine weddings in future posts. Avoid wearing red or other bright colors.<br /><br />Many young Filipinos are now no longer very much concerned about this, but the older generation still feels that it is disrespectful to wear red and other bright colors to a wake. It would be best not to ruffle their feelings.<br /><br />2. Bring any or all of the following for the family:<br /><br />- "Abuloy" is a gift of money to help in the funeral expenses. The amount is variable, depending on your capacity and your relationship to the family. This is purely voluntary, though, and is much appreciated but not required. It is placed in a small envelop with a message of sympathy and the name of the giver, and is given discreetly.<br /><br />- A mass card if the family is Catholic. This can be bought from the Parish office of most churches or from religious stores. It promises perpetual masses to be said for the deceased by the religious congregation from whom the card was bought. Make sure you have the full name of the deceased to be written on the card.<br /><br />- A card of sympathy.<br /><br />- Flowers. Even a small bouquet for the casket or a small basket to be placed beside it will be much appreciated. Most people send large floral arrangements, though. These are available in flower shops near funeral parlors.<br /><br />3. If you are a relative or a very close friend of the family, bringing food is also much appreciated. It is best to bring finger food that can be served with the least fuss, and food that will keep for several hours even without refrigeration.<br /><br />4. As soon as you arrive, ask for the person you know in the family. If this person is not around, introduce yourself to whoever is there to meet you. Explain how you are connected to the family. Give your condolences. If possible, speak to the immediate family of the deceased.<br /><br />5. Pay your respects to the deceased. It is customary to stand by the casket for a moment of silence.<br /><br />6. Sign the guest book.<br /><br />7. If the wake is being held in the home, do not be surprised to find people gambling. This is also a tradition that still persists for many. Part of the winnings are given over to the family of the deceased as "abuloy."<br /><br />8. Most wakes are all-nighters, especially when held in homes. You don't have to stay all night, though. When attending wakes in funeral parlors, try not to stay way past midnight to give the family time to rest.<br /><br />9. Do not be surprised to hear quite a number of superstitious beliefs regarding wakes.<br /><br />10. Do not be surprised to find people weeping in one corner while others are laughing in another. This is not disrespect. Wakes are also seen as a time to retell stories of good times with the deceased, and good times in the family and among friends.<br /><br />You need not avoid coming to a wake in the Philippines. The mother of a friend had passed away.<br /><br />While we were driving, my migraine peaked so bad that we had to turn around and head home. Perhaps it was my body's way of telling me that I wasn't prepared to face another funeral, especially of a friend's Mom.<br /><br />We have only recently had my Mom's funeral - just a month ago. We also had my Dad's funeral a year ago. I am the only child and these two funerals just a year apart have been very difficult for me.<br /><br />It was a great consolation that Philippine funerals are marked with such solid support from family and friends.<br /><br />My husband, our kids and I spent all five days and nights at the funeral parlor. It meant sleeping on the coach and sleeping bags in the anteroom or wooden pews in the main chapel.<br /><br />There was also a spacious toilet-and-bath, as well as a kitchen sink, refrigerator and dining set in the anteroom.<br /><br />Relatives and friends would come and stay with us from mid-morning until midnight everyday. They provided most of the food and drinks for everyone. There were always shopping bags full of biscuits, nuts, candies, tetrapaks of juice and 3-in-1 packs of instant coffee. There were boxes of pastries and platters of noodles. Some even brought us rice and viand at mealtimes.<br /><br />There were plenty of flowers, too, and mass cards. The mass cards meant masses would be said perpetually for my Mom's soul in many churches by various congregations.<br /><br />While there were plenty of visitors I was fine. I was busy talking to everyone. After they left, I would be too exhausted to feel anything else.<br /><br />Just being surrounded by family and friends was very comforting. They especially came in full force during the cremation. My two daughters and I were quite overcome with emotion while waiting for the urn and they kindly allowed us to nap in the anteroom while they stayed on in the chapel, waiting with us.<br /><br />It was almost the same experience we had during my Dad's funeral last year, except that I was then focused on comforting my Mom. I realized that it was much more difficult this time when I no longer had that "escape."<br /><br />There were some superstitious beliefs that were pointed out to us during the funeral, too. A popular one was for the deceased's immediate family not to step outside the threshhold when seeing guests out. Doing so would reportedly mean that another death would come to the family. We decided to abide by such beliefs, if only for the peace of mind of those who believed in them. Why else would they have to spell out that these types of food are not allowed in the theaters if no one has tried to bring them in?</p><p>I admit my family almost never goes to the movies without taking in some munchies. The all time favorites are, of course, popcorn, chips and chocolates. We've also been known to bring in hamburgers, hotdogs, nachos and pizza. But that's as far as we go.</p><p>I can still imagine having chicken nuggets in the theater, but regular friend chicken would be too messy. And imagine if people spill the gravy on the seats. That goes for pasta, noodles and soup, too.</p><p>Pinoys just love to eat. Anytime. Anywhere. Well, it has always been one and should be one.<br /><br />Apparently, President Arroyo has declared it inconvenient to celebrate Philippine Independence Day on a Tuesday. So June 11, a Monday, is now the non-working holiday, instead. June 12 is a working day but, according to the proclamation, all activities and celebrations in observance of Independence Day will be observed on June 12.<br /><br />I am told that this is a common and very popular practice - to have long weekends. So if Christmas Day falls on a Tuesday, should we then move our celebration to December 24 instead?<br /><br />December 25, 2007 does fall on a Tuesday!<br /><br />Thankfully, President Arroyo has not declared December 25, 2007 a working day. It's not that much of an improvement, though, because the weather has turned humid instead.<br /><br />Bring your umbrellas whenever you venture outside. Be careful with your choice of footwear, too. Make sure they can stand not only going through puddles but also going through flash floods. Yes, that happens often even in main thoroughfares.<br /><br />Wear something cool and just layer on your rain jacket. I suggest something lightweight. Remember the humidity.<br /><br />Have snacks and a drink in your bag because traffic is going to get worse, especially because June is also school-opening month. These snacks and the drink will also save your tummy if you get stranded because public transportation is going to be packed and some of them could get stuck in flooded areas.<br /><br />In case you get stranded, hope that it's at one of the many wonderful malls. The airconditioning will make you want to stay inside. The great shopping finds will also make you forget your predicament.<br /><br />When outside, what I always try to look out for during these rainy days, though, are children happily playing in the rain.
