It has a nice big malty nose with a hint of hops. The malt on the nose does not give off a sweet smell which means there are no fruity esters in this beer. There is malt on front and a quiet middle with a short but nice dry finish. This is a smooth, dry beer that would make for a nice session beer. Wild Dog is a series from Flying Dog that has consisted of their Double IPA in 2004, a Weizenbock in 2005, a Colorado Saison in 2006 and now the Doppelbock. The Doppelbock is unique in the fact that the beer was created through Flying Dog's Open Source Beer Project. Flying Dog combined feedback from the site and used it to create the recipe for this beer.<br />The beer poured a dark amber color with a thick, off-white foamy head. The nose was malty with a smokey note. The first palate consisted of malts and sweetness and progressed into a slightly dry finish in which the hops become apparent. The middle palate has a very smooth set of continuous malts and sugars. It is an enjoyable beer that is well balanced and extremely well made. But that is the neat thing about craft beers. We will find a beer just as good to replace it with. The reason for the surcharge would be to raise money for treatment and prevention programs. The result of the plan would be an increase in the cost of a six pack by $1.50 and a case by six dollars. Ortiz believes that if the bill is passed, it would raise $800 million a year.<br /><br />I have to believe that the reason for Mr. Ortiz proposing this bill has something to do with his own personal and political agenda. While I feel that alcohol and drug abuse are serious problems and need to be addressed, I do not think that Ortiz's motives are extremely pure. This proposal is not the way to go about solving the problem. First of all, the majority of people buying craft beer are buying it for enjoyment, not because they have a problem. Second of all, if this bill passes, it will be extremely difficult to afford craft beer in New York State. The combination of the hop shortage and this Democrat's bill would push the price of an average NY craft 6 pack up to around $10. I can only hope that government realizes that this bill is ridiculous and that it is shot down. Ellenville's a little ways off, up or down 209, depending on which way you're coming from. Still, located nearly halfway between the two places I work, it was going to be just a matter of thyme before I got out that way... <br />A 12 seat slight arc wood bar runs the length to the left, and behind it, a panelled mirrored bar back unit with shelving over the mirrors to each side holding booze and glassware, and the bottled beer selection displayed above. Hardwood floors, red pressed tin ceiling, arch windows cut into the wood slat front, diamond patterned pale green wallpaper and wood slat walls with a lime green trim. Ceiling fans, drop lighting over the bar & seating areas, candles on the bar, potted plants in the front window and on the bar, A TV over the beer cooler in the corner, great "Art of Nature" framed prints for sale (massive Statue of Liberty, Elvis, Einstein and other "mower cuttings" carved into cornfields), new retro signage, and large Amethyst pieces (purpley crystal chunks of transparent Quartz) displayed behind the bar at both ends. 3 elevated booths, 7 tables, and a bar counter for 2 in one of the front windows. There's a small separate dining area to the rear with a good view of their massive wine rack. <br />The menu, a meeting of gourmet and holistic cuisine, is very vegetarian friendly, and is geared towards healthy eating. Grass fed beef with no hormones or antibotics, free range chickens fed a pesticide free vegetrian diet, foods low in cholesterol and essence oils used in preperation and cooking. Owner/Chef Marcus explained that he tries to avoid using butter, heavy dairy, refined sugar and white flours in the preperation of his foods. He uses organic grains and legumes, and local produce. I had the pan seared Gulf Shrimp glazed with Chipotles, Pineapple & Molasses. I was concerned about the heat but went with it anyway, and it was just awesome. Marcus later commented, "The Molasses really carries the Chipotles", and right he was. Followed it up with a Blueberry crisp with Vanilla ice cream. Also, just perfect. <br />An extensive wine list, some good Single Malts and Tequilla's, 3 taps (Brooklyn Brown Ale, Ommegang Hennepin & Wit), and 2 dozen plus bottles. Good local and regional micros (3 offerings from Ommegang, Heavyweight Lunacy, Victory Hop Devil, Wolavers *Organic* IPA, Otter Creek Lager, Allagash Triple Reserve, Southern Tier Porter), micros afar (5 offerings from Rogue, Mendecino Red Tail Ale, Flying Dog Horny Dog Barleywine), and imports (Samuel Smith Oatmeal Stout, Corsendonk Brown Ale, Paulaner Hefe, Weihenstephaner Hefe Dark, Dinkel Acker), and a cider and N/A. It's a good beer list, small, but tight. Got a great meal, good conversation, and the service was excellent (Did I mention that Cassondra likes Barleywines?). <br />Trust me. The Haystack wheat has 5% ABV and pours a medium sized head, and a cloudy hay color, which may be where the name comes from. The beer has a clean nose with not much on the hop or malt side. The first sip is crisp and there is not much to the body. There is not much flavor in the middle and almost none on the finish. If you are looking for a lighter styler beer for a hot summer day this is not a bad choice, but if your looking for a nice big beer to sip on, I would look elsewhere. The first sip is very smooth and leads into a smooth, sweet, middle with a hint of caramel. The sweet middle does not last long as the beer moves into a very dry, very long, bitter finish. The beer is dry-hopped which leads to the very hoppy body. Overall, I was not overwhelmed by this beer, but then again it is not my favorite style. The March-May 2008 issue lists Weihenstephaner's Hefeweissbier Dunkel, Flying Dog Brewery's "Wild Dog" Collaborator Doppelbock and <a href="http://www.dogfish.com">Dogfish Head's</a> "Olde School" Bottle-conditioned barley wine-style ale as their seasonal beer picks. I called Chef <a href="http://www.marcusguiliano.com">Marcus Guiliano</a> at <a href="http://www.aromathymebistro.com">Aroma Thyme Bistro</a> in Ellenville, NY and asked him if he had any of the beers since Aroma Thyme has one of the most expansive beer lists in the area. He just happened to have all three on his list and invited me over to try the Dogfish Head "Olde School".<br />Dogfish only produces five beers year round (one of which is available only in the Mid-Atlantic), but produces 18 more seasonal and limited releases. The Deleware brewery has recieved much acclaim over the years for their brews and have been praised for their innovation. "Olde School" is one of those limited releases and was launched in November 2007. The beer pours a dark orange copper with a very thin head. The beer is fermented with dates and figs, and the nose gives off a smooth, fruity smell with a lot of malt. The first sip hits the palate strongly and you can taste a wide range of flavors. This pattern continues into the mid palate before tailing off slightly into a very nice finish. The beer has a whopping 15% ABV but hides it nicely. The beer is very good now but will only get better with time as the flavors have a chance to balance out.<br />I strongly suggest buying a four pack of this beer, tasting one now, and laying the other three down for a while.
