Cette recette ne sera pas ma recette définitive de brownie, mais elle est plus que «passable». Le brownie est plus onctueux, moins farineux, plus chocolaté que les versions traditionnelles de brownies. La voici donc...&lt;br /&gt;&lt;span style="font-style: italic;"&gt;I had promised you a brownie recipe. This won't be my definitive brownie recipe, but it's a close second best. The brownie is fudgier, less crumbly, more intensely chocolatey than traditional brownie recipes. So then, here it is...&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul id="ingredientsList"&gt;&lt;li&gt;1/2 lb de beurre non salé | 2 sticks (1/2 pound) unsalted butter&lt;/li&gt;&lt;li&gt;8 onces de chocolat mi-amer (moins de 60% cacao) | 8 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked)&lt;/li&gt;&lt;li&gt;2 tasses de sucre | 2 cups sugar&lt;/li&gt;&lt;li&gt;1 c. à thé d'essence de vanille pure | 1 teaspoon pure vanilla extract&lt;/li&gt;&lt;li&gt;5 gros oeufs | 5 large eggs&lt;/li&gt;&lt;li&gt;2/3 tasse de farine tout usage | 2/3 cup all-purpose flour&lt;/li&gt;&lt;li&gt;1/3 tasse de poudre de cacao | 1/3 cup unsweetened Dutch-process cocoa powder&lt;/li&gt;&lt;li&gt;1 pincée de sel | 1/2 teaspoon salt&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;p&gt;                                  Préchauffer le four à 350F. Beurrer et enfariner un moule de 13 x 9 pouces. | Preheat oven to 350°F with rack in middle. Un brownie qui ressemble davantage à un morceau de fudge, aromatisé au café, un pur délice. Mais... le chef ne veut pas partager sa recette. Je suis donc condamnée à faire des essais multiples... Comme la vie est cruelle! Si vous passez par Lennoxville, ne ratez surtout pas la chance de vous arrêter au kiosque de la ferme Beaulieu et d'y prendre un morceau de brownie. N'oubliez pas leurs tartes, leurs muffins, leurs brioches, leurs pains... le chef est très doué dans l'art de la gourmandise.&lt;/p&gt;&lt;p&gt;&lt;span style="font-style: italic;"&gt;This is where I found the perfect, or more than perfect brownie. It's a brownie that is more like fudge, flavored with coffee, a heavenly brownie. But... the chef won't share his recipe. So I have to proceed with a trial and error method... Life is cruel! Mettre les poires dans la casserole, recouvrir le liquide d'un papier parchemin, baisser le feu et laisser mijoter tout doucement pendant 15 minutes. Retirer le papier, retourner les poires dans le liquide et poursuivre la cuisson pendant 10-15 minutes. Retirer les poires du liquide. Servir froid. Dijon mustard&lt;/li&gt;&lt;li&gt;sel et poivre | salt and pepper&lt;/li&gt;&lt;li&gt;2 tasses de macaronis secs | 2 cups of dry macaroni&lt;/li&gt;&lt;li&gt;1/2 tasse de cheddar fort | 1/2 cup sharp cheddar&lt;/li&gt;&lt;li&gt;1/2 tasse d'emmenthal | 1/2 cup emmenthal&lt;/li&gt;&lt;li&gt;1/2 tasse de parmesan râpé | 1/2 cup grated parmesan cheese&lt;/li&gt;&lt;li&gt;1 c. à thé de sauce Worcestershire | 1 tsp Worcestershire sauce&lt;/li&gt;&lt;li&gt;Quelques gouttes de piri piri ou de Tabasco | A few drops of piri piri or Tabasco&lt;/li&gt;&lt;li&gt;8 biscuits soda émiettés | 8 soda crackers, crumbled&lt;/li&gt;&lt;li&gt;1 c. à s. de beurre fondu | 1 tbs. melted butter&lt;/li&gt;&lt;li&gt;1 c. à thé de piment d'Espelette | 1 tsp. Espelette pepper&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Préchauffer le four à 400 F. | Preheat oven to 400 F&lt;/li&gt;&lt;li&gt;Dans une grande casserole pleine d'eau salée, faire cuire les macaronis al dente. Égoutter et ajouter la moutarde de Dijon. Bien mélanger et réserver. | In a large saucepan full of salted water, cook the pasta until al dente. Add the Drain and add the Dijon mustard. Mix well and reserve.&lt;/li&gt;&lt;li&gt;Pendant que les pâtes cuisent, faire fondre les 2 c. à table de beurre dans le fond d'une casserole, ajouter la farine, bien mélanger et laisser cuire 1 minute. Ajouter le lait, faire chauffer en mélangeant jusqu'à ce que la béchamel soit bien épaisse et onctueuse. Ajouter les 2/3 du fromage, puis vérifier l'assaisonnement en sel et en poivre. Ajouter la sauce Worcestershire, le piri piri et le piment d'Espelette. | While the pasta are cooking, melt 2 tbs. of butter in a saucepan, add the flour, mix well and cook for 1 minute. Add the milk, heat while mixing until the sauce is thick and smooth. Add 2/3 of the cheese, then rectify the seasoning in salt and pepper. Add the Worcestershire sauce, the piri piri and the piment d'Espelette.&lt;/li&gt;&lt;li&gt;Émietter les biscuits soda, ajouter 1 c. à table de beurre fondu et bien mélanger. | Crumble the soda crackers, add 1 tbs. of melted butter and mix well.&lt;/li&gt;&lt;li&gt;Mettre les pâtes dans un moule allant au four, ajouter la béchamel sur le dessus et mélanger. Parsemer du reste du fromage, puis des biscuits sodas émiettés. | Put the pasta in an oven-proof dish, add the béchamel on top and mix. Sprinkle the remaining cheese on top, then cover with the crumbled soda crackers.&lt;/li&gt;&lt;li&gt;Cuire au four pendant une vingtaine de minutes, jusqu'à ce que le dessus soit bien doré et que la sauce bouillonne. | Bake in the oven for about 20 minutes, until the top is golden and the sauce bubbles.&lt;/li&gt;&lt;li&gt;Vous pouvez préparer le jour précédent et conserver au réfrigérateur. J'avais préparé ma &lt;a href="http://gato-azul.blogspot.com/2007/10/velout-de-citrouille-cream-of-pumpkin.html"&gt;soupe à la citrouille traditionnelle&lt;/a&gt; (épicée au gingembre, à la cannelle et au porto cette fois-ci) et elle a eu l'idée brillante d'y ajouter un peu de foie gras de canard sur un croûton (ou pas). L'astuce consiste à laisser fondre le foie gras dans la soupe... Une infime quantité fait une différence majeure. Il s'agit d'un des plus anciens fromages faits en Nouvelle-France, à l'abbaye d'Oka. Un fromage à pâte ferme qui a un goût qui lui est tout à fait particulier. Il se marie bien avec les pommes, ou les raisins (j'ai trouvé une variété de raisins minuscules, qui ressemblent presque à des groseilles, très sucrés et sans pépins).&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;a href="http://www.flickr.com/photos/23804856@N04/3959525673/" title="Chocolate Pots de Crème by Gato-Azul, on Flickr"&gt;&lt;img src="http://farm3.static.flickr.com/2588/3959525673_6007b12ac7_o.jpg" alt="Chocolate Pots de Crème" width="800" height="600" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;Et puisqu'un repas de fête sans chocolat est comme une journée sans soleil, j'ai fait les petits pots au chocolat de Lena. Je les ai aromatisés à la fève tonka. Pour 4 pots de chocolat, prendre 70g de chocolat noir, 200 ml de crème légère (15 % m.g.), un oeuf et une demie fève tonka. Faire chauffer la crème jusqu'au point d'ébullition, retirer du feu et ajouter le chocolat en petits morceaux. Faire fondre en mélangeant. Ajouter la fève tonka râpée, puis l'oeuf entier. Bien mélanger au fouet jusqu'à ce que tout soit bien homogène et verser dans des petits pots. J'assurais donc une présence auprès d'elle. Dans le cubicule à côté, un vieillard silencieux. Un patron (c'est un centre hospitalier universitaire) avait pris le patient en charge et il est arrivé pour le voir.&lt;br /&gt;&lt;br /&gt;«Pépère! Eh pépère!» dit-il à partir du couloir devant le cubicule, d'un ton qui ne convient pas nécessairement aux urgences. «Pépère! As-tu désenflé?»&lt;br /&gt;&lt;br /&gt;La réponse du patient n'a pas été faite sur un ton familier ni badin. Le patron (un médecin de grande expérience, un des pilliers de la faculté) entre alors dans le cubicule dont les cloisons sont formées par des rideaux.&lt;br /&gt;&lt;br /&gt;«Ton pénis rapetisse-t-il?» Puis il continue en disant fort «Ben oui! Il est tout petit».&lt;br /&gt;&lt;br /&gt;Le bon médecin ressort du cubicule, sourire fendu jusqu'aux oreilles et me tape un clin d'oeil. Dois-je vous dire que je n'ai pas réagi à son sourire inconvenant, sauf pour le regarder avec un dégoût sans bornes.&lt;br /&gt;&lt;br /&gt;En avez-vous marre de ces médecins arrogants, à la rigueur méprisants, sans discrétion et sans respect? On pourrait dire, avec euphémisme, qu'ils souffrent d'usure professionnelle, qu'ils sont désabusés. Je n'ai pas l'humeur euphémique, mais pas du tout!
