ElBullihotel.</title><content type='html'>fala manu.&lt;br /&gt;como vai voce? como estas?&lt;br /&gt;passeas mucho.&lt;br /&gt;jo estoy en barcelona, hizo un grande camino hasta aqui, ahora ja estoy de partida.&lt;br /&gt;se quieres contestame &lt;br /&gt;vale.&lt;br /&gt; &lt;br /&gt;¿como le ocurrió la cocina?&lt;br /&gt; &lt;br /&gt;No entiendo muy bien la pregunta (ocurrio), pero creo que quieres decir que tal en la cocina de la Alquería, la experiencia.&lt;br /&gt;La verdad, es que para mi ha sido como un parque de atracciones, subidas y bajadas todos los dias, de una hora a otra cambiaba todo, el estado de animo, la presión, la relajación. Es la cocina mas extraña en la que he estado nunca, muy inestable.&lt;br /&gt; &lt;br /&gt; &lt;br /&gt;&lt;br /&gt;¿ que caminos te trayeran a  cocina ElBulli?&lt;br /&gt; &lt;br /&gt;Pues creo que todos vinimos un poco por lo mismo, ver que es lo que se hacia en esta cocina y que veiamos en los libros, fotos, en internet, en los periodicos y en la tele.&lt;br /&gt;Una mezcla de interés, ilusión por la oportunidad,y un poco de excepticismo.&lt;br /&gt;&lt;br /&gt;Si la evolucion es aportadora de algo más. Qué aporta a la gastronomia ( lo que todo eso significa) esa cocina que ejerce?&lt;br /&gt; &lt;br /&gt;Aporta un nuevo punto de vista, nuevas tecnicas (para mi lo mas importante), una nueva filosofia. No se hasta que punto esta filosofía de ver la cocina ha de jado de ser filosofia para ser una forma de vender.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Hacia donde lleva ese camino de la cocina molecular? &lt;br /&gt; &lt;br /&gt;La verdad no lo se muy bien hacia donde va. Tengo la sensación de que en pocos años habra un cambio, orientado más a la cocina macrobiótica, la cocina de la salud, con las calorias y las vitaminas contadas en cada plato, sabiendo los beneficios que te hará comerte ese plato, más que el valor gastronómico que tenga. Sin duda la estética sera la misma de hoy, tiene que entrar por los ojos, pero la salud cobrará importancia por el modo de vida de hoy. Y habrá más interés por el tipo de vida rural.&lt;br /&gt;&lt;br /&gt;Sacar de la caña lo dulce de la miel (azucar) no es lo mismo desde antaño?&lt;br /&gt;&lt;br /&gt;Cidon no entiendo muy bien la pregunta!!!! Quieres saber si se están perdiendo las raices? Si el camino hacia la obtención del placer ahora es diferente y las cosas estan perdiendo significado? o me estoy poniendo muy metafisico??&lt;br /&gt; &lt;br /&gt;¿Cual es su reto?&lt;br /&gt; &lt;br /&gt;Creo que acercar la alta cocina a la gente que no tiene oportunidad de comer ciertas cosas, o simplemente con un emplatado bonito. A riesgo de que este tipo de cocina se prostituya, y pierda valor. No se muy bien lo que quiero aun, hay muchas dudas en mi cabeza (quizá sea la edad). Ajo Blanco de Malaga.</title><content type='html'>&lt;a href="http://2.bp.blogspot.com/_Zmcd9OV3rbw/Rv51CghvsRI/AAAAAAAAE4A/W71E44p459Q/s1600-h/ajo-blanco.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://2.bp.blogspot.com/_Zmcd9OV3rbw/Rv51CghvsRI/AAAAAAAAE4A/W71E44p459Q/s400/ajo-blanco.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5115654912691122450" /&gt;&lt;/a&gt;&lt;br /&gt;Esta é uma receita de alho branco junto da praça de touros de Málaga.&lt;br /&gt;ingredientes.&lt;br /&gt;3 dientes de ajo. alho.&lt;br /&gt;200gramos de almendras. amêndoas.&lt;br /&gt;leche. leite.&lt;br /&gt;200gramos de migas de pan mojados en leche. troços de päo embebidos de leite.&lt;br /&gt;1/4 l. aceite de oliva. azeite de oliva.&lt;br /&gt;250gramos de uvas moscatel.&lt;br /&gt;vinagre jerez.&lt;br /&gt;sal.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Se cuecen las almendras 2 o 3 min. para poderlas pelar.&lt;br /&gt;&lt;strong&gt;Cozinha-se as amêndoas por 2 ou 3 min. para poder pelar-las.&lt;/strong&gt;&lt;br /&gt;Una vez peladas se coloca en una batidora lo ajos, las almendras y el pan.&lt;br /&gt;&lt;strong&gt;Coloque no liquidificador as amêndoas peladas, os alhos e o päo.&lt;/strong&gt;&lt;br /&gt;Cuando todos los ingredientes estén ya bien trabajados a la batidora, se le agrega un litro de agua muy fria.&lt;br /&gt;&lt;strong&gt;Quando os ingredientes estiverem bem batidos e homogeneos se adiciona um litro de agua gelada.&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;se le echa sal y vinagre, segun el paladar. vinagure mas bien poco.&lt;br /&gt;&lt;strong&gt;uma pitada de sal e outra de vinagre ao seu gosto. Näo.</title><content type='html'>- Näo! ela disse.&lt;br /&gt;Ele zanzou como uma barata que levara uma chinelada mal-dada, tonto e ubiquado tentou se recompor. Tarefa difícil, mesmo quando as condiçöes säo amplas, dna desorientado.&lt;br /&gt;- Mas?!... começou por dizer ele, mas engoliu. Engoliu porque antes da razäo ele era sensível e sensitivamente sabia a diferença daquele näo, para por exemplo o  primeiro näo. Aquele daqueles dias.</title><content type='html'>Joaquim lia o jornal com uma lupa, tinha os olhos irritadiços e näo podia colocar as lentes de contato. &lt;br /&gt;Era um desejo louco de ver o mundo em sua podre realidade, maneira de fugir de dentro do seu próprio putreo momento. Da janela laterar divisava a casa da vizinha, donde saia uma músicabeata, que a empregada entoava num contralto ao mesmo tempo triste e galhofeiro. A casa da vizinha tem também jardineiro podando a mangueira. A filha da vizinha quando acorda curte a ressaca de sua banhas banhando-se de sol, dentro, quer dizer fora de um biquini verde amarelado ou amarelo esverdeado. Na garagem da vizinha tem pelo menos tres carros "semi-novos", branco, cinza e preto. Enquanto isso seu amigo destila vapores etílicos no sofa com a televisäo ligada no Maisvocê. &lt;br /&gt;O telefone toca e Joaquim diz que näo está. O certo seria dizer que: näo, näo tenho agora, mas que sim. pagarei, näo, näo esqueci-te näo. Depois toca de novo. Entäo ele diz: näo , ele foi para o sitio e só volta no sábado.&lt;br /&gt;Resolvidos esses problemas de pessoa jurídica, a Joaquim resta-lhe ainda a culpa. Sim por demais feminina.&lt;br /&gt;Seu amigo Dionisio tem sede e no seu caminho à geladeira, onde jaz uma garrafa de água vazia e tombada e sem tampa, passa pela sala de ser e estar, permanecer e ficar e diz isso: Os gregos curavam-se da ressaca com outro bamquete.&lt;br /&gt;alguma vez Joaquim há de haver dito: Hoje é terça-feira e poderiamos comer muito bem. tenho umas ostras, uns camaröes e uma paleta de cordeiro ao vinho que me sobraram ao restaurante.&lt;br /&gt;Dionisio se anima em mais endividar-se e sob o sol abrasador vai arrastando suas havaianas pelas ruas de Sousas, desviando-se dos credores näo-bancários. TEMPORÂNEO é constituido de frases que säo ordens onofrianas sensiveis: viva, ama, beija, meta (dentro e fora)... sensualidade, dizendo que o ar está fresco, mesmo para quem está no centro da fogueira. pino&lt;br /&gt;600 g de agua&lt;br /&gt;75 g de azúcar&lt;br /&gt;0,6 g de ácido ascórbico&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Poner las piñas verdes en agua caliente durante 1 min para limpiarlas.&lt;br /&gt;2.Cortar las piñas en trozos irregulares de 2 cm.&lt;br /&gt;3.Levantar el hervor al agua indicada con el azúcar y añadir las piñas verdes troceadas.&lt;br /&gt;4.Añadir el ácido ascórbico y guardar en la nevera durante 24 h.&lt;br /&gt;5.Colar por una superbag y guardar en la nevera.&lt;br /&gt;NOTA: Usamos el ácido ascórbico (vitamina C) como antioxidante.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el polvo helado de infusión de piña verde de pino&lt;br /&gt;Ingredientes&lt;br /&gt;200 g de infusión de piña verde de pino (elaboración anterior)&lt;br /&gt;Pacojet&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Introducir la infusión de piña verde de pino en un contenedor de Paco Jet y congelar a -20 ºC.&lt;br /&gt;2.Pasar la infusión de piña verde de pino congelada por la Pacojet de ración en ración obteniendo así un polvo helado similar a la nieve.&lt;br /&gt;3.Guardar el polvo helado obtenido a -20 ºC.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para la leche de piñón silvestre&lt;br /&gt;Ingredientes&lt;br /&gt;200 g de piñones silvestres pelados&lt;br /&gt;240 g de agua&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Triturar con la ayuda de un túrmix los piñones con el agua hasta romperlos bien.&lt;br /&gt;2.Dejar reposar en la nevera durante 12 h.&lt;br /&gt;3.Triturar la mezcla de agua y piñones en el vaso americano hasta obtener una crema.&lt;br /&gt;4.Pasar por una superbag ejerciendo toda la presión posible para recuperar todo el líquido y conseguir una leche de piñones densa y sabrosa.&lt;br /&gt;5.Colar y guardar en la nevera.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el sorbete de leche de piñón silvestre&lt;br /&gt;Ingredientes&lt;br /&gt;250 g de leche de piñón silvestre (elaboración anterior)&lt;br /&gt;1/5 hoja de gelatina de 2 g (previamente rehidratada en agua fría)&lt;br /&gt;sal&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Poner la leche de piñón a punto de sal.&lt;br /&gt;2.Calentar ¼ parte de la leche de piñón y fundir en ella la hoja de gelatina, una vez esté disuelta añadir el resto de leche y mezclar.&lt;br /&gt;3.Introducir la base de helado de piñón en un contenedor de Pacojet y congelar a -20 ºC.&lt;br /&gt;4.5 min antes del acabado y presentación pasar el helado por la Pacojet 2 veces y mantener a -8 ºC.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el praliné salado de piñones silvestres&lt;br /&gt;Ingredientes&lt;br /&gt;50 g de piñones silvestres tostados&lt;br /&gt;10 g de aceite de oliva&lt;br /&gt;sal&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Triturar los piñones con el aceite en el vaso americano hasta obtener una crema fina y sin grumos.&lt;br /&gt;2.Colar y poner a punto de sal.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para los piñones garrapinitro&lt;br /&gt;Ingredientes&lt;br /&gt;12 piñones salvajes tostados&lt;br /&gt;50 g de praliné salado de piñones silvestres (elaboración anterior)&lt;br /&gt;500 g de nitrógeno líquido&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Bañar los piñones enteros en el praliné de piñón e introducirlos en el nitrógeno líquido durante 5 seg para que el praliné se congele y los piñones queden totalmente recubiertos por el praliné.&lt;br /&gt;2.Sacar del nitrógeno y mantener los piñones garrapinitro a -10ºC.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el polvo de merengue seco de pasta de regaliz&lt;br /&gt;Ingredientes&lt;br /&gt;125 g de agua&lt;br /&gt;125 g de claras de huevo pasteurizadas&lt;br /&gt;7,5 g de claras de huevo en polvo&lt;br /&gt;25 g de azúcar&lt;br /&gt;35 g de pasta de regaliz&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Mezclar todos los ingredientes en frío y montar en la batidora eléctrica por espacio de 5 min.&lt;br /&gt;2.Dejar reposar 2 min con la batidora parada.&lt;br /&gt;3.Montar 10 min más y estirar a un grosor de 1 cm encima de una bandeja de horno con silpat.&lt;br /&gt;4.Secar en el horno a 100 ºC durante 40 min.&lt;br /&gt;5.Sin sacar del horno subir la temperatura a 120 ºC y mantener 40 min más.&lt;br /&gt;6.Cuando esté seco poner en una bolsa y aplastar para obtener el polvo.&lt;br /&gt;7.Guardar en un recipiente hermético en un lugar fresco y seco.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para las rocas y polvo de merengue seco de infusión de piña verde de pino&lt;br /&gt;Ingredientes&lt;br /&gt;125 g de infusión de piña verde de pino (elaboración anterior)&lt;br /&gt;125 g de clara de huevo pasteurizada&lt;br /&gt;7,5 g de clara de huevo en polvo&lt;br /&gt;25 g de azúcar&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Mezclar todos los ingredientes en frío y montar en la batidora eléctrica por espacio de 10 min.&lt;br /&gt;2.Estirar el merengue obtenido a un grosor de 1 cm encima de una bandeja de horno con silpat.&lt;br /&gt;3.Secar en el horno a 90 ºC durante 1 h y 40 min.&lt;br /&gt;4.Cortar el merengue seco obtenido consiguiendo 8 rocas de 1,5 cm de lado.&lt;br /&gt;5.Poner el resto de merengue en una bolsa y aplastar para obtener el polvo.&lt;br /&gt;6.Guardar en un recipiente hermético en un lugar fresco y seco.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para el liofilizado de gelatina fría de infusión de piña verde de pino&lt;br /&gt;Ingredientes&lt;br /&gt;200 g de infusión de piña verde de pino (elaboración anterior)&lt;br /&gt;1 hoja de gelatina de 2 g (previamente rehidratada en agua fría)&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Disolver la gelatina en ¼ parte de la infusión de piña verde de pino y mezclar con el resto.&lt;br /&gt;2.Verter en un recipiente que permita obtener una altura de 1 cm y cuajar en la nevera durante 2 h.&lt;br /&gt;3.Liofilizar durante 72 h.&lt;br /&gt;Una vez liofilizado, guardar en una bolsa envasado al vacío y en un sitio fresco y seco.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Para las láminas de caramelo neutro&lt;br /&gt;Ingredientes&lt;br /&gt;100 g de fondant&lt;br /&gt;50 g de glucosa&lt;br /&gt;50 g de Isomalt&lt;br /&gt;&lt;br /&gt;Elaboración&lt;br /&gt;1.Poner en un cazo a cocer el fondant y la glucosa. Remover hasta que quede todo disuelto y añadir el Isomalt.&lt;br /&gt;2.Cocer a fuego medio hasta que el termómetro indique una temperatura de 160 ºC (los 5 ºC que faltan los alcanzará con su propio calor).&lt;br /&gt;3.Retirar del fuego y estirar sobre un papel sulfurizado dejándolo en 1 cm de grosor.&lt;br /&gt;4.Cuando alcance la temperatura idónea, cortar en pastillas de 5 x 5 cm.&lt;br /&gt;5.Guardar en un recipiente hermético en un lugar fresco y seco.&lt;br /&gt;6.Poner una pastilla de caramelo entre dos silpats y calentar en el horno hasta que el caramelo funda.&lt;br /&gt;7.Sacar del horno y rápidamente estirar con la ayuda de un rodillo consiguiendo una lámina de caramelo de 0’1 cm de grosor.&lt;br /&gt;8.Guardar las láminas de caramelo obtenidas en un recipiente hermético y en un lugar fresco y seco.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Otros&lt;br /&gt;Ingredientes&lt;br /&gt;5 g de café recién molido&lt;br /&gt;4 brotes de shiso rojo germinado&lt;br /&gt;4 brotes de shiso verde germinado&lt;br /&gt;4 brotes de albahaca fresca&lt;br /&gt;4 brotes de germinado de borraja&lt;br /&gt;4 flores de borraja&lt;br /&gt;NOTA: El shiso es un tipo de menta asiática que posee notas de albahaca y menta. Entremig hi ha el suquet i doncs que dir de llur receptari amb llagosta i llamàntol - i altres cefalopodes -  especialment a les del litoral gironì. &lt;br /&gt;Per atotareu n'hi ha senyals de surrealisme, com el brou de peixos bullits fins a l'autodissolució com se hom vulguessin que el peix deixi no pas la consciència del seu gust i que si l'inconsciente mateix del gust. Tot això vaig sentir quan he tingut davant meu El guazpacho de bogavante. Des de la quenelle de una brunoise perfect de tomàquets, concombres, pebrot vermell, ceba i ceboullete vert, que de vegades em aporta a Gaudi en lo particularism del mosaic i altres a Dali al non-sense del pla general del plat, i naquest cas que sigui la quenelle el nas u bé com es fossi l'arc abans d'un diluvi anunciat que no tardarà. Romesco casolà.</title><content type='html'>ingredientes.&lt;br /&gt;bitxo remullat  i sense llavors.&lt;br /&gt;10 ametlles torrades&lt;br /&gt;3 grills de alls&lt;br /&gt;xic de sal&lt;br /&gt;oli 1/4 litre&lt;br /&gt;llesca de pa blanc&lt;br /&gt;llesca de pa fregit&lt;br /&gt;pebrot sec, romesc, sense llavors.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Encara que Tarragona vol dir forçosamente Romesco, no hi ha cap acord sobre aquesta salsa, sigui l'ideal u bé les variants que tot plegat son com tots els tarragonins afegit al menys daquest brasilé. Lo fonamental de la salsa ès el Romesco, pebrot sec, que li dóna sabor.&lt;br /&gt;un gra de all blanquejat?&lt;br /&gt;amb bitxo?&lt;br /&gt;amb pebre negre?&lt;br /&gt;amb herba aromàtica?&lt;br /&gt;amb tomàquet pelat sense llavors?&lt;br /&gt;amb pebre vermell?&lt;br /&gt;una fulla de menta?&lt;br /&gt; provi per a establir el teu secret.&lt;br /&gt;&lt;br /&gt;Posa al foc una cassola amb l'oli i fregeix lleugerament el romesco i la llasca de pa. un cop cuits aquest tres ingredientes s'afegeix una picada i guaita que picas que picaràs! Saco cheio.</title><content type='html'>Sabe lá o que é fatiar uma trufa e já näo ter vontade de meter uma fatia entre as cáries dos molares, ou separar caviar japones da suas tripas finissimas e ter isso como nÑäo mais que trabalho, ou o mignon do cordeiro, a vieira sobra no impossível canto da paella e o cataläo me assanha-a, e eu, eu declino. Ñ vou ser nunca dono da prostíbulo ou dos meus pensamentos. Brinco mas ainda ontem me fartei de Pata Negra.&lt;br /&gt;Pata Negra ademais de ter a pata negra, passa os últimos 18 meses da sua vida curta comendo uma castanha chamada Belota. Pois a se conjunto: porco Pata Negra e comedor de Belota chamam-o  Jamón de Jabugo ( o pernil ou a paleta). Trata-se de uma denominaçäo de origem controlada.
