It is important to cook the lentils over quite low heat - nothing more than simmering. Here is the part I particularly like - take a ladle and add coconut oil, butter, or ghee, add cumin and curry powder and toast over an open burner about one minute, add minced garlic for one minute more, then dunk it into the lentils until the steaming sound ends. Add yogurt and salt. Notice I added no amounts here, because this is mostly the beginning of these recipe enterprises, and is more for my own documenting than for your pleasure. . . but I shall "season" in time.<br /><br />Frittata<br />If making Frittata, don't just scramble the eggs then stick them in the oven if your recipe is two parts like mine. Instead, follow the recipe closely, if you are not yet a solid cook such as me. Such is this life.<br /><br />Also in this life is <span style="font-weight: bold;">Matzo Ball Soup</span>. Basic recipe:<br /><br />Combine two eggs with two Tbs of oil, mix well and whip it up, add 1/2 cup Matzo Meal, 1/2 tsp salt, mix, if too thick add very little cold water. Put into refrigerator for about 10-15 minutes, while you boil broth: chicken broth with some carrots, celery and onions, a nib of ginger and a small bit of garlic, and pepper. After the matzo mix has rested in the fridge, wet your hands and make balls about an inch in diameter: drop the balls into the boiling soup one at a time, turn the soup down to medium for about 3-4 minutes, covered, then change to a simmer for twenty minutes or so, covered. Turn off the stove and let sit for another 15-20 minutes, garnish with some kind of herb and add some salt if it is needed!!Joshua M. I spooned the squash from its skin into the blender, added Orange Juice, soy milk (due to owning no half/half or milk), blended it smooth. Meanwhile I heated about two cups of chicken stock in a pot - this is for the 1/2 of a medium sized butternut that was blended - then mixed the squash mixture into the stock. <br /><br />I tasted - the squash flavor was deep and good, but it didn't come together. I added the rind with cheese of Emmenteller Swiss, let it simmer for about twenty minutes, then added rice vinegar. With some fresh pepper, it "came together" pretty good.Joshua M. This is the first time in my adult or other life that I am making enough money to feel that I am a bit o' an adult: all-the-while attending UNC-A full-time! This is not as startling as it sounds, because every commitment is after 4:30 pm, and the pay is very, very good, and many others at UNC-A work full-time with demanding hours. But I love, love it woah.<br /><br />I was nominated for a <a href="http://www.blogasheville.blogspot.com/">BlogAsheville award</a>. In "Most in Need of a Redesign". Sad.<br /><br />School is goin' strong, with 18 credits life is busy. Statistics, is an easy class! Calculus, is not a hard class, even though this time as my second attempt due to my C- grade not transferring. Sad. Two Biology classes, are great. My transfer class with the wonderful Dr. Dwight B. Mullen of local fame is a joy.<br /><br />This is my 500th entry: cheers!<br /><br />My grandmother passed away just more than one year ago and I wish to officially note the passing, as it is a bit o' a Jewish thing to remember after one year, or perhaps we all do this "one-year rememberance" though to different degrees.
