Spicy Butter Prawns

M & I has always been a big fan of SEAFOOD. We used to have our seafood feast at Telok Gong or Kepong. But now that I can cook better, we prefer to enjoy them at our cozy home.

Ingredients:
600g large prawns
1 tsp salt
1 tsp sugar
1 tsp pepper
1 tsp sesame oil
1 cup corn flour
1 tbsp curry powder

2 tbsp butter
3 bird's eyes chillies (thinly sliced)
2 cloves garlic (chopped)
3 sprigs curry leaves

1. Marinade prawns with salt, sugar, pepper & sesame oil for 1/2 an hour.

2. Combine corn flour and curry powder in a plate. Coat prawns with the flour mixture and deep-fry them.

3. In a clean wok, heat butter. Saute garlic, add in chillies and curry leaves. Fry till fragrant. Add in the prawns and mix well with the ingredients.

Note: You can start adding in garlic when the butter is halfway melting. Butter is easily burnt. So, work fast with the ingredients.

Should I?

I am mad at my friend but am not sure if I have the right to be mad at her. She is a very close friend of mine and a friend that I wanted to grow old with. We used to go out for a drink once a week, but as our personal & work lives demanded more of our times, we spend lesser time together. However, every time we meet up, we would chat endlessly and it makes up for those months that we haven't been talking to each others.

This year, our relationship got abit tense. We haven't been seeing each others except for birthday celebrations, and it is like 4 months once. Despite that, I thought I still have a very special relationship with her.

Recently, I received an email from her after months of no-news from her. It's an update of her life: her new boyfriend and new job. If she has written this email just to me, I would be very happy. But there were about 8 recipients. She has emailed this to all our friends. It is just like another group discussion. I felt betrayed and hurt because I thought if there is any big changes in our lives, we would inform each others personally first. She could have insist on asking me out for a drink and update me about this, or perhaps email to me personally first. My thought of our special bonding was crushed.

I told my darling about this and he asked me to let it go. He said that when someone changes, you should just let it be. So if your friend do not put this friendship on HIGH, then you should do likewise. Do not expect anything in return! I hated what he said but I am not blaming him. His thinking is always very simple, and not complicated. Unlike me, I am more emotional and complicating.

A few days after receiving her email, we had a birthday gathering. We did not talk much to each others, mainly it was a group chit-chatting. I couldn't help myself from feeling betrayed and hurt. And a sense of awkwardness filled up the gap. I know that I could just let this feeling eats up our friendship but the question is Should I? Should I tell my friend what I am feeling inside and work my way in mending back our friendship? Or should I just let it be?

Chendol Pudding

This recipe was passed down to me by my aunt (Kam Mo). She's a great cook and I've always been a no.1 fan of her culinary. She's pretty, talented (used to be an illustrator before marriage), cook and bake very well.

This chendol pudding is M's favourite dessert from me. I've made this on his birthday as a replacement for his birthday cake.

Ingredients:

Bottom Layer
5 tsp agar-agar powder
130g sugar
560ml thin coconut milk
1/2 tsp salt
220ml thick coconut milk
1 packet/220g chendol strips

Top Layer
3 tsp agar-agar powder
420ml thin coconut milk
30g sugar
150g palm sugar/ gula melaka
2pcs pandan leaves
220ml thick coconut milk
1/2 tsp salt

Bottom Layer
1. Add all the ingredients (except thick coconut & salt) in a pot, combine well. Boil it until sugar dissolved, stirring constantly.

2. When mixture is boiled, add in the thick coconut milk and salt.

3. Continue to stir until mixture started to form bubbles at the side. Off the flame, add in chendol strips.

Important Note: Do not over-boiled the mixture. It must be taken off flame second before it reach the boiling point. If you're not careful and over-boiled the mixture, it will form a thin layer of 'skin' on the surface.

4. Pour mixture into an 8" square tin. Let the mixture slightly set on the surface before pouring in the top layer.

Top Layer
5. Repeat the same with the top layer.

Tips: Scar the surface of the bottom layer with a fork or knife before pouring in the top layer. This is ensure that both layers will stick together.

It has been a while since I last update you guys on my favourite nieces, the Sister Sister. They both has grown up to be so intelligent and adorable, I would say. The elder one, Chloe, is 3 years & 2 months old while Chairmaine or familiarly known as Mei Mei is 1 year & 3 months old.

My Favourite Childhood Cartoon: Jem

Have you guys heard of the cartoon Jem? Also known as Jem and the Holograms, Jem is an American animated series that ran from 1985 to 1988 in U.S. first-run syndication. If I've not mistaken, I started watching Jem when I was 7 years old.

The show is about a music company owner Jerrica Benton, her singer alter-ego, Jem, her band the Holograms, and their adventures. The central "secret" of the series is that Jem is in fact the alter ego of Jerrica Benton, owner/manager of Starlight Music, who adopts this persona with the help of Synergy, a holographic computer designed to be the ultimate visual entertainment synthesizer built by her father, who left it to her on his death.

I'm so thrilled to have found Jem's first episode on youtube. I thought no one remember Jem anymore. Watching these videos brings back all my childhood memories. Now, I feel like 7 again!

Biggest Mango I've Ever Seen

Yup, that's right! This is the biggest mango i've ever seen. That's a 50cent i've used as a comparison. I saw this in the market the other day and couldn't resist buying it even tho' it's quite expensive (@ RM12/kg). The seller told me that this mango is from Taiwan. Weighing at about 1.2kg, this mango is 25cm in length and has the slimmest seed, as shown in the photo [Right]. Some peoples call this paper seed. A mango like this is enough for a family of six. If you're asking me if I would buy this mango again, I would honestly tell you no. It does not have a distinctive smell of mangoes like the Indian mangoes but it has alot of 'meat'. Unless you're looking for 'meaty' mangoes that has no mango smell, you can skip this.

Almond Biscotti

This is the picture of my first homemade biscotti. I've used almond flakes in this recipe. Biscotti is Italian for 'biscuit' or 'cookies'. 'Bis' means twice and 'cotti' means baked. Biscotti refers to any cookies or biscuits which are baked twice. And since biscotti are crisp and crunchy, it can easily stand up to a dunking in our coffee or wine.

The biscotti that i've made is a traditional biscotti, as it does not contain butter or oil, and uses eggs to bind the ingredients together.

Ingredients:
90g soft flour/ cake flour
3 egg whites
80g castor sugar
90g chopped nuts of your choice

1. Preheat oven to 140ºC. Whisk egg whites and sugar until it forms stiff peaks. Fold in flour and nuts and pour batter into a lined 8" loaf tin. Bake for 55mins.

2. Remove from the tin to cool. Slice according to desired thickness and return to the oven to bake until crispy, about 20mins.

Tips: The thickness of your biscotti controls the texture of it. The thinner it is, the crispier it will be.

New Coffee In Town

Hey, coffee lovers! Do you know that there is a new coffee in town? Well, It's not exactly new because we all know that Super has been in the market for quite some time. But recently, Super has come out with this ready-to-drink can packaging. Having to drink Super coffee before, I boldly grab a can from nearby convenient store. To my disappointment, the can Super coffee doesn't taste as good as the 3-in-1 packet. In my opinion, it is abit too flat and too sweet. I guessed my Nescafe Iced Latte is still the best among all the can coffee drinks!

I love coffee! If i could get a nice cup of hot cappuccino every morning, i would be in heaven. I've only started to adore cappuccino during my visit to Bangkok 2 years back. There, I had a nice hot cappuccino every morning. It was absolutely amazing!

M has promised me to buy us a coffee machine. And I've just found out the right place to get it. It is at Coffee For Less. Convenient and Reliable, that's the two words that popped up in my mind when i came across this site. Excitedly, I browsed straight for my coffee machine even tho' there were lots of other products available. Within minutes, I think I've found the perfect one.

It has a Pannarello Wand which is the easiest way to froth for cappuccino and steam your milk for latte; a hot water dispenser for hot chocolate, tea or Americanos and it has a scratch resistant black anodized steel for its housing. So cool, right? Oh, and the best of all is that Coffee For Less is giving out Free Shipping On Orders Over $50.

No Caffeine For Me

I had a series of headaches during the recent weekend. It got to the peak on Sunday night whereby I vomited and cried because i couldn't stand the pain anymore. M has prohibited me from drinking coffee for the whole week because he thinks that the culprit to my headaches is Mr. Caffeine.

I was doing fine with caffeine-free on day 1. But on day 2, I started to feel discomfort without caffeine. I kept denying that I am addicted to coffee even tho' I was begging him desperately to let me drink coffee. After an hour of begging & pestering, M let me drink coffee. I had half a cup on that day. Despite the truth, I hate it when M says that I am addicted to coffee. I do not know why it is so hard to confess to M that I am a Coffee Addict. Maybe it is just my ego.

It has been 4 days since my last attack, I am doing fine now. My 'Caffeine-Free' for one week was a failure. I am on caffeine again since day 2. So far, M is fine with me drinking coffee again as long as I am not having headache. Let's hope that I won't get any headaches so soon, ya!

Aloha Peeps

Aloha, peeps! I'm back [again]! I'm sorry for not visiting and blogging for the past month. I've been busy with my works and life. It was hard for me to juggle my time between all these but now I am glad I am able to spend some quality time with you guys.

So, how was your Mother's Day celebration? M & I had a steamboat feast at his parent's. It was fun as always. Back with my mom, M & I had an early Mother's Day celebration. We made 'pan meen' for her. It was yummy~licious.

As I was clearing off my comments these two days, my online friends, namely Marzie and Debbs, and I were talking about being Skinny Winny. They were saying how good it is that I am SW that i can eat whatever i wanted. They are true in this area but being a SW me also encounter difficulties. For instance, it is very difficult for me to find a fitting dress, shirts and pants. I've been a SW for half of my life. Sometimes, I wish I could be fatter but the quiz i took from Blogthings tells me to quit whinning. Looks like I am destined to be thin.

Blog Makeover: Time Goes By

Alas!! I've completed our TGB makeover! As usual, I am abit slow when it comes to thinking of a new blog design. What's making it harder is that I am still deeply in love my Journey of Two + 1 template. My heart refused to move on, instead musing back on Journey of Two + 1. It took me a while to put my love for Journey of Two + 1 aside and come out with another nice design such as this. M did a wonderful job by contributing some interesting opinions here & there during the process. Now, M & I are two proud owners of our new lovely home! And we would like to welcome everyone to our new home. :)

Goldenball

Both M & I love to eat Goldenballs. Goldenball is the name given to it at Sushi King. I've tried making them last time but failed. The eggs were not well coated then. Since M love to eat Goldenball so much and it's so easy to make, I tried making them again on our Earth Hour dinner. I am so happy with the end result because it looks exactly like those in Sushi King. As a matter of fact, i think mine tasted better. lol!

Ingredients:
4 Hard Boiled Eggs
2 tbsp corn flour
1 tbsp starch flour
3 tbsp water
Breadcrumbs
4 crabstick
2 tbsp mayonnaise
Enough oil to deep-fry

1. Cut crabstick into tiny short strips. Combine with mayonnaise.

Tips: To cut crabstick into tiny short strips the fastest way, cut into 4 long strips first. Then holding the four strips together, cut thinly as you would like cutting a carrot.

2. Combine corn flour, starch flour and 3 tbsp water in a small bowl. Mix well.

3. Roll egg in flour mixture. Then to a bed of breadcrumbs. Coat the egg well with breadcrumbs. Make sure the whole egg is well coated.

Tips: While you are coating the egg with breadcrumbs, pour a few drops of flour mixture onto the egg, then quickly sprinkle some breadcrumbs on it. Press it on. Repeat this step until the whole egg is well cotaed. Because the surface of egg is slippery, it will takes some time to coat an egg.

4. Deep fry eggs in hot oil until golden brown. Dish it out, halve the eggs. Serve them with a spoonful of crabstick mayo on top.

Blog Makover: Journey of Two + 1

I really enjoyed doing this makeover for Steph. Steph is an old online buddy of mine. Tho' we don't visit each others often but there's still a bonding between us. I love it everytime she's here, commenting happily at AGP or at TGB!

All along, I have been enjoying myself reading her lovely blog which is about her journey with her other half. In between she will talk about useful daily tips. That's why I was jumping for joy when she came to me for a blog makeover. Since we've such a good bonding, i think it should be easier for me to design a nice theme that suits her likeable. Her request for this makeover was really simple. She said she wanted an elegant yet homely blog. The rest of the details are up to me.

With only the theme to work with, I started on this makeover early this week. It took me 3-4 days just to think of this layout. I know I can easily do this makeover by using my old existing layout but I wanted each of my makeovers to have an unique design & layout. I am so thrilled and excited with the end result. And I've been so tempted to use this theme for TGB too. It's just so perfect for a Love Blog, don't you think!

I've also installed a script for password protected posts and a user-friendly change font widget. Meaning she can add a password to her private post. This is really useful if you don't want other peoples to read some of your private posts. And for the change font widget, it enables her readers to change the font at her blog easily.

Midnight Quizzes

While I was at the convenient store nearby my house just now, I saw that they are selling Kopiko 3-in-1 coffee in a foam cup. Remembering that Mon has recommended this coffee to us few months back while Marzie, LJ, Ane, Debbs, Mon and I were having our coffee talks, I quickly grabbed a cup without much hesitation. For a cup like this with one sachet of instant coffee, it cost you RM1. I think this individual packing is really neat for those on the go and those who wanted to try how this coffee taste like. If it's nice, then we can buy a pack of them later. And if it's not nice, then we only have to suffer drinking a cup.

When I got home, I quickly made myself a cup of my newly bought Kopiko coffee. I've got to say that I don't really like this Kopiko coffee. Maybe I am so used to drinking my favourite Injoy White Cappucino, this Kopiko coffee tasted rather thin for me. Or perhaps maybe i should add some ices in it, an iced coffee is always a good choice for me!

Blog Makeover: It's A Dog's Life

When Sumuk came to me for a blog makeover two weeks ago, she said she needed a makeover in conjunction with her 1st Blogversary which will be on 31st March. At that time, I was about to complete Sweetytots makeover but on the list, there was another blog waiting for me. It would be impossible for me to finish both the blogs and Sumuk's blog on time. So, I told the blog owner whom is also my good old friend in the net, about the situation I was facing. She was so thoughtful to allowed me to go on with Sumuk's blog first. Thank you, Steph!

Sumuk was really patient with me because I've been amending her blog many times. One of the reason is that her monitor is wider and shorter than mine. So, we have differences in viewing the blog. Sometimes, the brightness of monitor could cause the differences too. I am so glad that at the end, Sumuk was happy with the makeover.
