Spring in the Texas Hill Country is alive with the colorful beauty of native Texas wildflowers and the heavenly scent of the many lavender fields. Perched atop a hill with magnificent views, it is easy to see why Marriott selected this site for its newest resort, slated to open in February 2010. As construction of the property continues, Hill Country residents are busy too preparing for the many spring celebrations of the area.

The Texas Hill Country region more resembles the hills of Provence than the tumbleweed-strewn deserts of familiar western iconography. The sunny, mild climate of the Texas Hill Country and its topography provide ideal conditions for growing lavender. There are many lavender farms throughout the area providing organic lavender and lavender products to visitors and residents. May and June are peak blooming months, and visitors travel annually to walk through the fields, pick their own bouquets and even sample the unique flavoring of the plant in delicious recipes brought over from France.

Adding more beauty to the Texas landscape each spring are nearly 5,000 species of wildflowers. Black-eyed Susans, Red Poppies and Indian Paintbrushes flood the countryside with bold colors and textures visible across the state. Most prominent this time of year is the Bluebonnet – a flower so beautiful and abundant during the spring that in 1901 the Texas Legislature chose it as the state floral emblem.

The Texas landscape plays an important role in the new JW Marriott San Antonio Hill Country Resort & Spa. Not only will native wildflowers be present in the intricate landscape of the property, but their rich colors are also being used throughout the interior of the resort. The deep reds and golds will be seen in the fabrics, and images of wildflower fields will be a part of the resort’s collection of art, which includes many works from local artisans. In the spa, both the colorful blooms and the lavender essence will play an important role not only in the décor but in the unique treatments offered.

Becker Vineyards 11th Annual Lavender Festival, Stonewall, TX, May 16 & 17 Becker’s three acres of lavender will be the setting for a festival that will feature speakers and vendors promoting lavender education as well as gardening tips, cooking demonstrations, wine tasting, and luncheons.

Fifth Annual Blanco Lavender Festival, Blanco, TX, June 12-14. The entire town of Blanco will be bathed in lavender during the festival as the town square hosts a lavender market and local restaurants will serve lavender dishes. Surrounding lavender farms will also be hosting tours, lectures and other entertainment.

The JW Marriott San Antonio Hill Country Resort & Spa opens in February of 2010. Located north of San Antonio yet convenient to the airport, the resort provides easy access to all the attractions of the Hill Country region.

5 Minute Chocolate Mug Cake

Must be on a chocolate bing -

5 MINUTE CHOCOLATE MUG CAKE 4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 large coffee mug
1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) A small splash of vanilla extract
Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes. (1000 watt microwave)
The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to feel slightly more virtuous)

Review: Sampled a Champagne Truffle - It was fantastic - after consuming the sample I googled the internet for information about how to eat dark chocolate. I found the following that gave very definite instructions:

Find a location free from background noise and smell , such as television, music, a crying baby, road traffic noise, talkative friends etc. Being able to concentrate as intently as possible will facilitate flavor detection.
Clear your palate. This means that your mouth should not contain residual flavors from a previous meal. Eat a wedge of apple or piece of bread if necessary. This is crucial in order to taste the subtleties of chocolate's complex flavor.
Make sure that the piece of chocolate is large enough to accommodate full evolution of the flavor profile. A piece too small may not allow you to detect every subtle nuance as the chocolate slowly melts. The important thing to remember is that flavor notes gradually evolve and unfold on the tongue rather than open up in one large package. So remember, don't think small here. 10g should be a minimum starting point.
Allow the chocolate to rest at room temperature before tasting. Cold temperatures will hinder your ability to detect the flavors. Some even advise that you rub the chocolate briefly between your fingers to coax the flavor. This procedure is optional.
Look at the chocolate. The surface should be free of blemishes such as white marks (called bloom). Observe the color and manufacturer's job at molding and tempering. Does the chocolate appear to have been crafted carefully or slovenly? The bar should have a radiant sheen. Chocolate comes in a multifarious brown rainbow with various tints, such as pinks, purples, reds, and oranges. What do you see?
Break the piece in half. It should resonate with a resounding "SNAP!" and exhibit a fine gradient along the broken edge. This is quality stuff!
Smell the chocolate, especially at the break point. The aroma is an important component of flavor. Inhaling will prime the tongue for the incoming chocolate. It also gives you a chance to pick up the various nuances of the aroma.
Place the chocolate on the tongue and allow it to arrive at body temperature. Let it melt. Chew it only to break it into small enough pieces that it begins to melt on its own. After all, we're tasting and not eating! This step is crucial, for it allows the cocoa butter to distribute evenly in the mouth, which mutes any astringencies or bitterness in the chocolate.
Observe the taste and texture. As the chocolate melts, concentrate on the flavors that are enveloping your tongue. Melting will release more volatile compounds for you to smell. Close your eyes, take notes, enjoy this moment of bliss, and bask in contentment. Texture can be the most obvious clue about the quality of a chocolate. Low quality chocolates will have a grainy almost cement-like texture.
Now the chocolate is nearing its finish. How has the flavor evolved? Is the chocolate bitter? Heavy? Light? Was the texture smooth or grainy? Do any changes in texture and flavor occur? Take note of how the chocolate leaves the palate. Is there a strong reminder lingering in your mouth, or does it quickly vanish? Note any metallic or unpleasant flavors in the finish. This is a sign of stale or lower quality chocolate.
Repeat the process with a different chocolate. The comparison will highlight the subtle flavor notes in each chocolate. Be sure to cleanse your palate thoroughly before tasting each different chocolate.
In a nutshell, find your "happy place," listen to it break, stare at it, smell it, and then eat the chocolate very slowly instead of eating the bar quickly.

Double-Decker Schnitzel Sliders with Hot Pink Slaw

Double-Decker Schnitzel Sliders- fun to say, and fun to eat. Inspired by emerging superstar chef David Chang’s trend-setting use of bold Asian flavors, playfulness and deep love for pork, these chic and sassy sliders burst with sweet, sour, salty and spicy layers of crunchy bliss in every bite.

Schnitzels
6 slices bacon, cooked, drained and chopped (fat reserved)
6 pork cutlets or 6 thin pork chops, pounded to 1/8-inch thickness
1/2 cup all-purpose flour
Freshly ground pepper
1 egg
1 teaspoon hoisin sauce
1 cup panko breadcrumbs
3 tablespoons canola oil

Slaw
1 teaspoon seasoned rice vinegar
1 teaspoon hoisin sauce
3 tablespoons mayonnaise
1/2 teaspoon Sriracha chili sauce (available at Asian markets)
1 cup shredded green cabbage
1/2 cup shredded red cabbage

To Serve
2 tablespoons mayonnaise
1/2 teaspoon Sriracha chili sauce
6 small potato rolls, such as Martin’s Famous, toasted
2 tablespoons hoisin sauce
12 dill pickle slices

Make the schnitzels: In a skillet over medium low heat, cook the bacon until crisp. Drain, reserving 1 tablespoon bacon fat, and let rest on paper towels. When cool, chop coarsely, and set aside.

Cut a cutlet crosswise into 2 pieces, and trim to create 2 (2-inch by 2-inch) pieces. Repeat with remaining cutlets, for a total of 12 pieces. In a shallow bowl, place the flour, and season with pepper. In another shallow bowl, beat the egg, and stir in the hoisin sauce. In a third shallow bowl, place the breadcrumbs.

Prepare a small sheet tray lined with parchment. Dip a cutlet in the flour, and shake off excess. Using the opposite hand, dip the cutlet in the egg mixture. Switching back to the dry hand, dip the cutlet in the panko, and pat to be sure it is completely coated. Place the cutlet on the sheet tray, and repeat with remaining cutlets. Place tray in the refrigerator, and let sit 30 minutes.

Meanwhile, make the slaw: In a medium bowl, combine vinegar, hoisin, mayonnaise and chili sauce, and stir. In a large bowl, place green and red cabbage, and fold in the vinegar mixture until well combined. Refrigerate until ready to serve.

Cook the schnitzels: In a large nonstick skillet, combine the canola oil and 1 tablespoon reserved bacon fat, and heat until oil shimmers. Working in batches as necessary, cook the schnitzels, turning once, until crisp and golden-brown, about 5 minutes total. Drain on paper towels.

Prepare the sliders: In a small bowl, stir together mayonnaise and chili sauce. Open the rolls, and lay them out on plates. Spread 1 teaspoon mayonnaise mixture on the inner bottom half of each roll. Spread 1 teaspoon hoisin sauce on the inner top half of each roll. Place a schnitzel on the bottom half of each roll, then top each with 2 pickle slices and one-sixth of the reserved cooked bacon. Cover each with a second schnitzel, then top each with 1/4 cup slaw. Place tops on rolls, and serve.

3 Redneck Tenors-Americans Got Talent

Okay, so they didn't win or even come close to doing so on Americas Got Talent. However, maybe they should have done better- they sure have the talent. Last night they appeared at Waco's Hippodrome Theatre. They were great. Fantastic voices-lulled us through an evening of wonderful music and comedy. At the end of the journey when they sang several arias, the audience to a man was on its feet.

Had they performed 3 Saturday Night Tenors at the Mudcat Saloon & Salon - YMCA during the Americas Got Talent competition they might have placed or even won Americans Got Talent. I think they choose the wrong piece to perform and that did them in.

A hilarious evening- great entertainment-will attend more of their concerts: those are the comments I heard from the audience at intermission and at the end of the evening. We loved the whole show. But I felt The Lone Prairie and TV theme Song Medley was worth the price of the ticket. So were Staying Alive, Greensleeves, well I could just go on and on. Writing, singing, orchestration, and humor made for a memorable evening. I strongly recommend you attend one of their concerts if you are lucky to have them book into a theatre near you.

Waco Texas River Sounds-Free Concerts

The Bosque River meanders through much of McLennan County, and Waco Texas is its hub. Traveling through central Texas and Waco on I-35 in the coming month, you will find motel and hotel rooms available as most of Baylor University’s student population is elsewhere for the summer. I recommend that you exit the highway and stay a while in this interesting town. If possible, try to spend Thursday nights in Waco so that you can attend the River Sounds Concerts held Thursday evenings at the Bosque River Stage at McLennan Community College. These events are free.
Music begins at 8 pm.

Artistic Design by Rose -Waco Tx Artist

Rose Jacobson is a local Waco artist. I call her affectionately "Grandma Rose (s)". She prefers that her work be titled "Artistic Design by Rose". This artist is proof that creativity does not wane with age. Her most recent project has been to create wall plaques using silk flowers and decoupage. She has recently begun selling her art on http://www.craigslist.com/ .

Her favorite medium is watercolors. Her home is her gallery. If she invites you to view her creations, you will be impressed with the variety of subjects she has tackled and her technical and artistic abilities. She is a world traveler and the beauty she has experienced is reflected in her art.

Her bio: Born in Waco Texas. Her interest in art began at an early age and she has been constantly drawing and painting since then. She attended Baylor University and studied Art and Music. She also studied with Robert Wade at MCC. She attended numerous workshops with local artist in Waco-Don Magid and Walter McCown as well as studying with nationally acclaimed watercolor teachers-Naomi Brotherton, Angie Banta Brown, Cece Turner, Marci Boone, Mary Barton and others.

She is a member of the Art Center of Waco, Community Artist and Students Association, Waco Art League and Central Texas Watercolor Society. Her goal is to keep learning and growing by striving for good design, composition, color and continued inspiration and enthusiasm.

The Miracle on Clay Ave, Waco Texas

There are a variety of non-profit organizations located within ¼ square mile of Clay and 13th St in Waco TX. Baylor University is located to the north east on S 5th St. This is a conservative Baptist University. MCC (Metropolitan Community Church) which ministers to a diverse congregation is located a few blocks south on Clay. Planned Parenthood is located on Ross just a short two blocks to the east. Gospel Café provides free lunches Wednesday through Friday and is located on 10th St a few blocks to the northeast. Caritas, a food pantry and thrift store is located on S 15th, 3 blocks to the west. This area of Waco is known as South Waco. It is home to some of the poorest families in Waco. It is also home to a unique childcare center.

Talitha Koum Nurture Center is in the heart of this geographic area. This non-profit organization is a therapeutic nursery that serves 24 children, from infancy to six years, and their families. Talitha Koum uses a mental health therapeutic approach based on curriculum and principles proven to decrease crime and arrest rates and increase graduation rates and income levels of the children who attend the center as well as their parents. Individual donations support the center.

“Make a Memory Luncheon” held on May 10, 2007 at The Palladium, 729 Austin Ave, Waco TX honored mothers, grandmothers, daughters, and sisters, wives, friends, and benefited Talitha Koum Nurture Center. Nelwyn Reagan, Lisa Jaynes and Russell Trippet hosted the luncheon. Special sponsors were Phil Adkins, Central National Bank, Festive Occasions, First National Bank of Central Texas, Tom Stanton, and Jim Hawkins.

Morganna Harwood gave the keynote address titled “A Message for Moms”. Nan Holmes, previously of KWBU and now Executive Director of Talitha Koum recognized one of Talitha Koum’s special volunteers.

The program, which also included an audio and visual presentation, was a tribute to all Mothers and to the Talitha Koum Ministry, which is truly a Miracle on Clay Ave.
