When brewing v1.0 you need to keep some beers around where you open 1 every month to see how it ages and when is the best time to drink it. As you know some beers can take a few months or even years to lager correctly. We often mistake 2 weeks in the bottle as sufficient, but we are playing with live organisms and they continuously change.<BR/><BR/>Keep up the good work, relax and have fun brewing!!!<BR/><BR/>P.S.
