I used a bit of lemon juice (just for the acidity), sugar to taste, and just enough water to prevent burning. I boiled it for a bit until the pears were mushy, smooshing it with a potato masher as it cooked. Then I jarred it and processed it for 20 minutes for the smaller jars and 30 minutes for the large ones. Very similar processing and head space to your applesauce. It turned out delicious.
