It would make it sweeter and take out some of the peppery flavour. I would use half and half oil and vinegar plus some salt and pepper to taste, herbs could be added for a fresh flavour.

I put about 4 tablespoons of sugar into a jar and added malt vinegar. I I mixed them well together. I added the chopped mint to the jar. This is what it looks by below.
