My regular readers would know that I have&lt;a href="http://culinarybazaar.blogspot.com/2009/04/moving-big-time.html"&gt; been MIA for last few days&lt;/a&gt;. We were moving to a new place and there was simply too much work to be done.Phew! Am I glad that its all over now. We have not completely settled down - there's still so much to be taken care of still to make me feel totally comfy like a home, but we are getting there slowly. The new place has a small lawn with a prebuilt private lemon tree in the backyard &lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="" src="http://i349.photobucket.com/albums/q371/d-k-photos/new-house11.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;and a common orange tree in the front yard...So you can rest assured that all those juicy 'organic' lemons and oranges are not going waste and the local squirrels and birds are going to have competition now ;)&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="" src="http://i349.photobucket.com/albums/q371/d-k-photos/new-house16.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;I was thinking....Now that I have a new kitchen, it just dint sound fair that I enjoy my new kitchen all by myself and not share with my loyal and wonderful readers. How can that be? I want to share my upgraded kitchen with you all too so that you can benefit the ease of use just like I do - Sounds logical isnt it? Shifting to a new place, new area and to meet some new neighbors. My husband and I have this supposedly inane habit of moving E V E R Y T H I N G on our own and by our own. We did the first, the second and we are doing it yet again. That's some back bending work ppl! Oh come to think of it - the computers are going to be too. We think it’s a little smaller than we anticipated.&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Yeah. Some compromises were made to have it out by the release date.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; We won't be able to fit all our furniture in there.&lt;br /&gt;&lt;strong&gt;Contractor:&lt;/strong&gt; Well, you have two options. You can purchase a new, larger living room; or you can use a Stacker.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; Stacker?&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Yeah, it allows you to fit as much furniture into the room by stacking it. Of course, you put the entertainment center on the couch and the chairs on the table etc. You leave an empty spot, so when you want to use some furniture you can un-stack what you need and then put it back when you're done.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; Uh... I dunno... issue two. The second issue is the light fixtures. The bulbs we brought with us from our old home won't fit. The threads run the wrong way.&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Oh! That's easy. Those bulbs aren't plug and play. You'll have to upgrade to new bulbs.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates: &lt;/strong&gt;And the electrical outlets? The holes are round not rectangular. How do I fix that?&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Just uninstall and reinstall the electrical system.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; You're kidding!&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: "Nope. It’s the only way.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; (sigh) Well! I have one last problem. Sometimes when I have guests over, someone will flush the toilet and it won't stop. The water pressure drops so low that the showers don't work.&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: That's a resource leakage problem. One fixture is failing to terminate and is hogging the resources preventing access from other fixtures.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; And how do I fix that?&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Well, after each flush you all need to exit the house. Turn off the water at the street, turn it back on, re-enter the house and then you can get back to work.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; That's the last straw. What kind of product are you selling me?&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Hey, if you don't like it nobody made you buy it.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Bill Gates:&lt;/strong&gt; And when will this be fixed?&lt;br /&gt;&lt;strong&gt;Contractor&lt;/strong&gt;: Oh, in your next house that will be ready to release sometime near the end of next year. But then, if you have not made them before, this post will show you how easy and simple it actually is, to make this Korean speciality by your own, without having to grab the kimchi jar at your local supermarket. &lt;strong&gt;Kimchi,&lt;/strong&gt; also spelled &lt;strong&gt;gimchi&lt;/strong&gt; or&lt;strong&gt; kimchee&lt;/strong&gt; is a traditional korean side dish(banchan) and is made by fermenting vegetables. This was originally done with the purpose of preserving vegetables as a means of storage for the winters. Because of its unique flavours and the preserving tendancies, it has come to be enjoyed by the rest of the world too.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 518px; TEXT-ALIGN: center" alt="Korean Baechu Kimchi (chinese cabbage kinchee)" src="http://i349.photobucket.com/albums/q371/d-k-photos/Kimchi/Kimchi-korean24.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;There are quite a few variations of making Kimchee, spicy Baechu(cabbage) Kimchi being the most popular which is what I have made for this post.I have this recipe from an "Authentic Korean cooking" cookbook which I have adapted a bit to my taste and availibility of ingredients. I have blanked out on the name of the author and will update the post with the same once I recall/find the author's name.&lt;br /&gt;You can adjust the ingredients according to your taste buds. :)&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 large chinese (Napa) cabbage&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 medium daikon radish&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 scallions (spring onions), chopped&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 bunch mustard leaves (optional)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp minced garlic&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2" ginger, peeled and grated&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 cup red chilli powder&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 tbsp sugar&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 cups sea salt (kosher salt)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;10 cups water&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Remove the outer leaves of the Napa cabbane. Cut of the edges. Seperate the leaves. Keep aside 3-4 leaves and then chop the rest into quarters.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Korean Baechu Kimchi (chinese cabbage kinchee)" src="http://i349.photobucket.com/albums/q371/d-k-photos/Kimchi/Kimchi-korean1.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;In a large skillet, add the 10 cups of water along with salt. Give it a swirl and then soak the cabbage leaves for 6-8 hours.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Korean Baechu Kimchi (chinese cabbage kinchee)" src="http://i349.photobucket.com/albums/q371/d-k-photos/Kimchi/Kimchi-korean2.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;After soaking, remove the leaves, wash/rinse in cold water and squeeze out any excess water. Set the salted water aside. Dont throw it away. Slice the daikons into matchsticks. Chop the mustard greens if using. In a bowl, add the ginger garlic paste and the chilli powder -&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Korean Baechu Kimchi (chinese cabbage kinchee)" src="http://i349.photobucket.com/albums/q371/d-k-photos/Kimchi/Kimchi-korean3.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;make it into a paste by adding about 1/2 cup of water.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Korean Baechu Kimchi (chinese cabbage kinchee)" src="http://i349.photobucket.com/albums/q371/d-k-photos/Kimchi/Kimchi-korean5.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;To this paste, add the daikon,scallions,mustard greens and mix until blended. You could say the same for any cooking, but my choice, again among those, would be Asian cooking  one of them being Korean. My personal exposure to Korean food is not very vast except for the famous and popular dishes and few not so well known from my research of the cuisine. Among the popular ones, Bee Bim Bap (or Beebimbop,bibimbap) holds a prominent place. It is one dish meal with layers stacked one on top of the other and is predominantly made with beef.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="Beebimbap,Beebimbop,Bee Bim Baap" src="http://i349.photobucket.com/albums/q371/d-k-photos/Bee-Bim-Bap/Bee-Bim-Bop20.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Sanchae Bibimbap &lt;/strong&gt;which means Fresh Vegetable Bibimbap uses lots of vegetables along with the meat. I have this recipe from an Authentic Korean Cooking cookbook ( I misplaced the author’s name) from which I adapted this recipe to make it meatless and added a wee bit more ingredients to suit my palate. It’s pretty simple to make and instead of the Portobello mushroom which I used to replace the meat, non-vegetarians can use Beef to do the same process (simply marinate for more time than what is specified in this recipe)&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 cup small red radish, cut into thin slices&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 medium daikon radish, peeled and sliced into thin strips&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 carrot, sliced into strips&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 cucumber, sliced&lt;br /&gt;&lt;br /&gt;&lt;li&gt;approx 4-5 cups spinach, washed with stems discarded (baby spinach works v well)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;About 4-5 large portobello mushrooms,cleaned and chopped&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 small yellow onion,sliced&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2-3 cups cooked Jasmine rice&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;ul&gt;For the Marinade&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 tbsp Soy Sauce&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 tsp sugar&lt;br /&gt;&lt;br /&gt;&lt;li&gt;4 tsp spring onions/scallions, finely chopped&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 tsp minced garlic/garlic paste&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 tsp coarsely ground toasted sesame seeds&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 tsp sesame oil&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp Rice vinegar&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/4 tsp black pepper&lt;br /&gt;&lt;br /&gt;&lt;li&gt;salt taste ( make sure to add less salt that your usual amount since Soy sauce also contains sodium)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;Korean hot chilli sauce to serve (optional)&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;In a bowl, add all the ingredients for the marinade. &lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Beebimbap,Beebimbop,Bee Bim Baap" src="http://i349.photobucket.com/albums/q371/d-k-photos/Bee-Bim-Bap/Bee-Bim-Bop1.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Add the chopped mushrooms, give it a toss and close it with a plastic wrap and let it sit for at least 30 min. &lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Beebimbap,Beebimbop,Bee Bim Baap" src="http://i349.photobucket.com/albums/q371/d-k-photos/Bee-Bim-Bap/Bee-Bim-Bop2.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Steam all the vegetables except the spinach and onions. Just 2-3 minutes before removing the vegetables add the spinach and let it wilt. Alternatively if you dont like your cucumbers steamed, then prepare a marinade with little Vinegar,sugar and salt and marinare your cucumbers in it until before serving. In a pan, cook the onions until soft.&lt;br /&gt;&lt;br /&gt; &lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Beebimbap,Beebimbop,Bee Bim Baap" src="http://i349.photobucket.com/albums/q371/d-k-photos/Bee-Bim-Bap/Bee-Bim-Bop3.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Now add the mushroom along with the marinade until cooked. They look just like beef dont they ? ;) Alternatively prepare fried eggs, if you like eggs. Something about them - the scent, the freshness or the taste - attracts me to them and I find myself looking for various permutations and combination to add them to my daily diet. I got myself some fresh looking Dill last week and for my usual dinner of Roti (which is Indian flat bread), I added the herb along with often forgotton spice - Dill seed.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="" src="http://i349.photobucket.com/albums/q371/d-k-photos/Dill%20roti/Dill-roti0000014.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Depending on your taste buds and preferences, add the herbs since many ppl find the herb little overpowering. I found 1 tbsp of the herb added only the slightest hint of its presence but enough to make a wonderful change and the dill seeds only help to compliment it. I am not a fan of leafy salads either. They really dont fill me up and I end up feeling doubly hungry, deprived and I end up overeating later on. To avoid that, I opt for healthy and filling soups accompanied by sizable piece of breads. I have made Red Lentil soup before but the addition of coconut milk along with lemongrass makes all the difference. Bursting with flavour and protein, this will soon become your go-to meal often enough, mark my words :) Serve it with a crusty bread.&lt;br /&gt;&lt;br /&gt; &lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="Red Lentil Soup" src="http://i349.photobucket.com/albums/q371/d-k-photos/Red%20Lentil%20Soup/red-lentil-soup0000025.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 Onions,finely chopped&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2-3 cloves of garlic&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 inch piece of lemon grass, chopped into thin slices&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 cup red lentils, washed until water runs clear&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp cumin-coriander powder&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 cups coconut milk (freshly made, or canned)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp paparika (or as per taste)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 lemon&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 scallions&lt;br /&gt;&lt;br /&gt;&lt;li&gt;salt and pepper to taste&lt;br /&gt;&lt;br /&gt;&lt;li&gt;few sprigs of cilantro for garnish&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;In a saucepan, in 1/2 tsp oil saute onions, garlic and lemon grass until soft.&lt;br /&gt;&lt;br /&gt; Same old lady finger curry!!!" naysayers - this Bhindi Do Pyaza is for you :) Bhindi (Ladies finger) Do (two) Pyaza (Onions) is a North Indian dry curry where it denotes onions used twice the normal amount with Ladiesfinger to make this dish. One just needs more onions and do a stir fry along with ladiesfinger and ta-da, the dish is ready. I am going to dissapoint the 'Hail Frozen Foods' folks here since I am really sorry, Frozen ladiesfinger will not work at all. If you really want to, then its mushy heaven for you :)&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="Bhindi Do Pyaza/ Ladies Finger and Onion stir fry" src="http://i349.photobucket.com/albums/q371/d-k-photos/Bhindi%20Do%20Pyaza/Bhindi-do-pyaza0000023.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;I have seen few variations, esp one with tomatoes added to it. Somehow I prefer when the fusion of onions and ladiesfinger is not distracted by the addition of tomatoes.Although this dish will not find its way under "Done within 10min" category, it sure is worth that wee bit of extra patience. The trick to avoid the mushiness is not to cover when cooking these ladiesfingers and also to use fresh ones. Not frozen. Prep time is approx 5-10min and cooking time another 15-20min. But the 30minute wait makes it worth it at the end of it all :)&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;About 500 gms Ladiesfinger/Okra/bhindi (approx 1-1/2 pounds)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 onions, sliced&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tbsp ginger-garlic paste&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp cumin seeds&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp turmeric&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tbsp cumin-coriander powder&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tsp chilli powder (or as per taste)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp Dry Mango Powder /Amchur (optional - instead you can add lemon juice)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp &lt;a href="http://culinarybazaar.blogspot.com/2008/11/garam-masala-indian-magic-spice-mix-rm2.html"&gt;Garam Masala&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;li&gt;Salt to taste&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Wash, clean and dry the fresh ladiesfinger thoroughly. Should not be wet. Among quite a few other breakfast dishes, pancakes also form a substantial part in my house. I forgot to post this basic pancake which is one of the most popular of all pancakes and recently only when my friend wanted me to post this, that I even realised that I dint have it here in my blog! I dont want to leave out the good things in life :) I have tweaked the basic buttermilk pancake recipe to suit my pantry and nutrition. Instead of whole egg, I add two egg whites - leaving out the cholesterol. Instead of refined white sugar, I usually add Demerera sugar which is unrefined and is better for health. I reduced 3 tbsp butter to one - the egg white takes care of the absent butter.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 518px; CURSOR: hand; HEIGHT: 346px; TEXT-ALIGN: center" alt="Buttermilk Pancakes" src="http://i349.photobucket.com/albums/q371/d-k-photos/buttermilk%20Pancakes/Buttermilk-Pancakes0000036.jpg" border="0" /&gt;&lt;br /&gt;Making it this way, my taste buds dont decipher the "lack" of anything and yet the favourite recipe remains almost the same except for little enhance in nutrition. Here goes.&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 cup All purpose flour&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 tbsp Demerera sugar (or white sugar)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp Baking Soda&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp Baking Powder&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1/2 tsp salt (or as per taste)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1-1/2 cups thick buttermilk&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 egg whites (or 1 egg)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tbsp butter (optional)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 tbsp vanilla extract&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt; &lt;p&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Add all the dry ingredients together and stir until blended.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Buttermilk Pancakes" src="http://i349.photobucket.com/albums/q371/d-k-photos/buttermilk%20Pancakes/Buttermilk-Pancakes0000001.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Mix the wet ingredients together seperately and stir well.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Buttermilk Pancakes" src="http://i349.photobucket.com/albums/q371/d-k-photos/buttermilk%20Pancakes/Buttermilk-Pancakes0000002.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Add the two (dry and wet) ingredients together v v gently and slowly blend it together. Let them rest for 5-10minutes. Though it is not neccessary, I find that the pancakes turn out to be airer than without.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Buttermilk Pancakes" src="http://i349.photobucket.com/albums/q371/d-k-photos/buttermilk%20Pancakes/Buttermilk-Pancakes0000003.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;In a non stick pan, lightly drizzle some vegetable oil (like PAM spray) or use a paper towel to wipe the surface with oil. Make sure the pan is not too hot or too low. Medium heat is perfect for pancakes. Take a 1/4 cup of the batter and drop it in the pan.&lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Buttermilk Pancakes" src="http://i349.photobucket.com/albums/q371/d-k-photos/buttermilk%20Pancakes/Buttermilk-Pancakes0000009.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;You know you are doing it right, when you see the holes/bubbles appearing on the surface and also that it is time to turn. It happens for many things in life for me now. I don't need the reason..I just know, exactly like what happened with this recipe for Orange Loaf Cake. The minute I saw it, I knew I would love it. Went for my regular annual checkup and they had these plethora of mags lying around among which was this Taste of Home edition. I was flipping through it when I saw this recipe. It clicked immedietely and since I had no paper or pen to note it down, I used my phone camera to copy the same. The only changes I made to it(and thats only cos I wanted to use all my oranges and nothing else!) was to increase the Orange juice and decrease the no. of eggs whites from 4 to 2 to accomodate more Orange juice. Since roti is a staple in my home, having it for dinner almost every other day, I try to bring about variation. Roti's are one of the best ways of adding in different grains. This time its going to be with Barley. Barley are another nutrition powerhouse. But there are times, thanks to hectic lifestyle, such things tend to slip my mind. One thing which is more dangerous than anything is blaming time for not eating properly. That being said, these Barley Roti's come to rescue. I use Barley flour, along with whole wheat flour, which are available in everywhere, even in Indian stores. Instead of using plain water to knead the dough I use barley water. You can use the cooked barley as an alternative to plain white rice - for the same meal or refrigerate it and use the next day for salad prep, patties etc.&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1 cup Barley flour&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1-1/2 cup whole wheat flour, plus extra for dusting,rolling etc&lt;br /&gt;&lt;br /&gt;&lt;li&gt;Barley water to knead the dough&lt;br /&gt;&lt;br /&gt;&lt;li&gt;salt to taste&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Prepare barley water as &lt;a href="http://culinarybazaar.blogspot.com/2007/11/rsvp-series-back-to-basics.html"&gt;shown in this post&lt;/a&gt; (skip the lemon).&lt;br /&gt;&lt;br /&gt; &lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Barley Roti" src="http://i349.photobucket.com/albums/q371/d-k-photos/Barley%20Roti/BarleyRoti0000001.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Add the flours and salt together and stir well. &lt;br /&gt;&lt;br /&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 346px; CURSOR: hand; HEIGHT: 230px; TEXT-ALIGN: center" alt="Barley Roti" src="http://i349.photobucket.com/albums/q371/d-k-photos/Barley%20Roti/BarleyRoti0000003.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;Add enough barley water to knead the dough. "Pain au son" is a french bread which means "Bran Bread". To be called as one, one would need to use at least 25 percent of bran in the bread. This bread really stores well and it lasted for 10 days for me. As fresh and yummy as day one. Simple to make and hearty indeed.&lt;br /&gt;&lt;br /&gt;&lt;fieldset&gt;&lt;br /&gt;&lt;ul&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 cups lukewarm water&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3 tbsp honey&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1-1/2 tsp active dry yeast&lt;br /&gt;&lt;br /&gt;&lt;li&gt;1-1/2 cups Oat Bran and few more for dusting ( alternatively you can use 1-3/4 cups of wheat bran too)&lt;br /&gt;&lt;br /&gt;&lt;li&gt;3-1/2 to 4-1/2 cups all purpose flour&lt;br /&gt;&lt;br /&gt;&lt;li&gt;2 tsp salt&lt;br /&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/fieldset&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Stir the water,honey in a large bowl. Turn the dough out onto a floured surface and knead briefly. Let it rest for 5 minutes, loosely covered, then flatten gently into an oval.
