I really enjoy it though. I slice a little leftover polenta, season it with some kosher salt, garlic and freshly ground black pepper, then brown it in a non-stick. I like leftover polenta better than freshly made for some strange reason. The eggs were seasoned with some minced onion and pepper. The only letdown was the apple. It produced a LOT of smoke. My kitchen looked like a Cheech & Chong movie was being filmed there. The results were worth it!
