I first heard about Dr. Seyfried's work in February 2007 when he released &lt;a href="http://livinlavidalowcarb.com/blog/?p=1600"&gt;this study published in the journal &lt;i&gt;Nutrition &amp;amp; Metabolism&lt;/i&gt;&lt;/a&gt; that showed how a restricted high-fat, low-carb ketogenic diet was the best way to fight cancer cells that are causing life-threatening tumors in mice. They're reading labels, looking for natural alternatives to sugar, and in general attempting to live a better life for the sake of their weight and health.  With all the chemical-based sugar substitutes that are out there today, the sad fact is that the vast majority of them are not necessarily the best options for people who are attempting to maximize their health. While stevia is certainly not new to the market, Cargill Foods debuted Truvia to consumers in October 2008 to provide a great-tasting blend that takes the sweetest part of the stevia plant called rebiana and use the all-natural sugar alcohol erythritol as a bulking agent.  This is in stark contrast to that nasty sugar-based maltodextrin bulking agent that all those "other" ones use. Even since that experience, I've been using Truvia in just about everything I sweeten, including beverages, protein shakes, in recipes, and more!  Currently they're only available in the green packets, but Cargill Foods is working on making it available in scoopable bags for baking soon.  Additionally, there are a number of products that already include Truvia in them right now as we talk about in the video, but many more are on the way (The Coca-Cola Company is working on a diet soda sweetened with Truvia!).  I do believe you'll be seeing a LOT more about this innovative stevia-based sugar alternative in the coming years.&lt;br /&gt;&lt;br /&gt;I can appreciate that we're beginning to see all-natural sweeteners like &lt;a href=http://www.truvia.com&gt;Truvia&lt;/a&gt; hitting the market because it proves there is a demand for these kinds of products.  With all the concerns over what aspartame, saccharin, and other chemicals used so prominently in sugar-free, low-carb diet foods and beverages are doing to our bodies, it's such a refreshing change of pace to find something that you can feel confident about. It's all in the complex matrix of the Dreamfields products compared with the conventional pastas.  Take a look at Figure 1 for what a standard pasta looks like microscopically:&lt;br /&gt;&lt;br /&gt;&lt;img src=http://i574.photobucket.com/albums/ss187/livinlowcarbman/photo-1-8.jpg?t=1255032647&gt;&lt;br /&gt;&lt;br /&gt;As you can see, the starch granules all-too-obvious and the protein molecules are chock full of holes.  Compare and contrast this with Figure 2 showing this same vantage point with the Dreamfields brand under the microscope:&lt;br /&gt;&lt;br /&gt;&lt;img src=http://i574.photobucket.com/albums/ss187/livinlowcarbman/photo-21.jpg?t=1255032796&gt;&lt;br /&gt;&lt;br /&gt;Very clearly, the matrix is much more complex, there are no visible starch granules present, and the protein is solid.  What's that mean to you when you're eating Dreamfields pasta?  It means the digestion of the Dreamfields pasta will not suddenly spike your blood sugar and send you on an unwanted insulin rush.  Instead, you'll get to savor some of the best-tasting pasta you've ever eaten while still being able to stay on your low-carb lifestyle. When it says to cook it for 10 minutes, make sure you remove it from the heat immediately and consume.
