He has taken a Chicken Gumbo Recipe that he saw Emeril cook and has modified it to make it into a great Duck -Sausage - Shrimp Gumbo.&lt;br /&gt;&lt;br /&gt;Below is the initial ingredients from Emeril's Recipe. I am showing some of the changes that were made. However, as every good cook, he says he changes a little here and there.&lt;br /&gt;&lt;br /&gt;Any Way - It turned out real good!&lt;br /&gt;&lt;/b&gt;&lt;/i&gt;&lt;br /&gt;1 cup vegetable oil&lt;br /&gt;1 cup all-purpose flour&lt;br /&gt;1 1/2 cups chopped onions&lt;br /&gt;1 cup chopped celery&lt;br /&gt;1 cup chopped bell peppers&lt;br /&gt;1 pound smoked sausage, such as andouille or kielbasa, cut crosswise into 1/2-inch slices&lt;br /&gt;1 package of small shrimp&lt;br /&gt;1 1/2 teaspoons salt&lt;br /&gt;1/4 teaspoon cayenne&lt;br /&gt;3 bay leaves&lt;br /&gt;6 cups chicken broth&lt;br /&gt;1 pound wild duck meat, cut into 1-inch chunks&lt;br /&gt;1 teaspoon Rustic Rub, recipe follows&lt;br /&gt;2 tablespoons chopped fresh parsley leaves&lt;br /&gt;1/2 cup chopped green onions&lt;br /&gt;1 tablespoon file powder&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Combine the oil and flour in a large cast iron or enameled cast iron Dutch oven over medium heat. Stirring slowly and constantly for 20 to 25 minutes, make a dark brown roux, the color of chocolate. Add the onions, celery, and bell peppers and continue to stir for 4 to 5 minutes, or until wilted. Add the sausage, salt, cayenne, and bay leaves. Continue to stir for 3 to 4 minutes. Add the chicken broth. Stir until the roux mixture and water are well combined. Bring to a boil, then reduce heat to medium-low. Cook, uncovered, stirring occasionally, for 1 hour.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Season the duck with the rub below and add to the pot. Simmer for 2 hours. Skim off any fat that rises to the surface. Remove from the heat. Stir in the parsley, green onions, and file powder. Reduce heat; simmer 8 minutes or until pasta is just tender.&lt;/li&gt;&lt;li&gt;Meanwhile microwave meatballs according to package directions. Add meatballs to soup; simmer 3 minutes or until meatballs are heated through. To make Parmesan ghosts, place ghost shaped cookie cutter on baking sheet. Place shredded Parmesan cheese inside cookie cutter, pressing down slightly with fingers to form shape. Carefully remove cookie cutter and repeat to make desired amount of ghosts. Bake in 350°F oven for 3 minutes. Remove from oven, cool slightly. Remove ghosts with spatula to wire rack; cool completely. Serve with soup. To make creepy croutons, cut sliced white bread into Halloween shapes with cookie cutters.                                  &lt;h2&gt;                         Instructions&lt;/h2&gt;&lt;ol id="InstructionList"&gt;&lt;li&gt;Heat oil in large skillet over medium heat until hot. Add onion and 3 cloves garlic; cook and stir 2 to 3 minutes or until onion is tender.&lt;/li&gt;&lt;li&gt;Add red peppers, wine, tomato paste and thyme, stirring until tomato paste is blended. Combine broth and cornstarch in small bowl, mixing until smooth. Stir into pepper mixture; bring to a boil. Reduce heat to medium-low; simmer 10 to 12 minutes or until slightly thickened, stirring occasionally. Keep warm.&lt;/li&gt;&lt;li&gt;Meanwhile cut beef steak into 1-1/4 x 1-1/4 x 1-inch pieces. Combine pepper, salt, paprika and 1 clove garlic in large bowl. Add beef; toss to coat. Thread beef pieces evenly onto six 12-inch metal skewers, leaving small space between pieces.&lt;/li&gt;&lt;li&gt;Place kabobs on grid over medium, ash-covered coals. Grill, covered, about 7 to 9 minutes for medium rare (145°F) to medium (160°F) doneness, turning once. Open packet carefully. Sprinkle potato mixture with parsley and the 1 Tbsp. Maybe a little fancy for Willy - what do you think.  10-4 Willy&lt;br /&gt;&lt;/h2&gt;&lt;h2&gt;Ingredients&lt;/h2&gt;&lt;ol id="IngredientList"&gt;&lt;li&gt;1 pound boneless beef top sirloin or top round steak, cut 3/4 inch thick or flank steak&lt;/li&gt;&lt;li&gt;1/2 cup prepared non-creamy Caesar dressing&lt;/li&gt;&lt;li&gt;2 cups coarsely chopped romaine lettuce&lt;/li&gt;&lt;li&gt;1/4 cup shredded Parmesan cheese&lt;/li&gt;&lt;li&gt;4  hoagie rolls (6 inches long each), split, toasted&lt;/li&gt;&lt;/ol&gt;&lt;h2&gt;Instructions&lt;/h2&gt;&lt;ol id="InstructionList"&gt;&lt;li&gt;Cut beef steak lengthwise in half, then crosswise into 1/8 to 1/4-inch thick strips. Reserve 2 tablespoons dressing. Pour remaining dressing in medium bowl. Add beef; toss to coat. Cover and marinate in refrigerator 30 minutes to 2 hours.&lt;/li&gt;&lt;li&gt;Remove beef from marinade; discard marinade. Heat large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove from skillet; keep warm. Repeat with remaining beef.&lt;/li&gt;&lt;li&gt;Toss lettuce with reserved dressing and 2 tablespoons cheese in medium bowl. Divide evenly over bottom of each roll. Top with beef; sprinkle with remaining cheese. Here it is.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;-----------&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;ol id="IngredientList"&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl01_lblFormat"&gt;&lt;li&gt;4  beef shoulder center steaks (ranch steak), cut 1 inch thick (about 8 ounces each)&lt;img class="cooksTipIcon" src="http://www.beefitswhatsfordinner.com/recipeDisplay/images/ChefsHat.gif" /&gt;&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl02_lblFormat"&gt;&lt;li&gt;Black pepper&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl03_lblFormat"&gt;&lt;li&gt;Salt&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl04_lblFormat"&gt;&lt;/span&gt;&lt;/ol&gt;&lt;ol id="IngredientList"&gt;&lt;div class="Subheading"&gt;Citrus-Jalapeño Mojo:&lt;/div&gt;&lt;li&gt;3 cups  bottled fresh-squeezed orange juice&lt;/li&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl05_lblFormat"&gt;&lt;li&gt;1/4 cup fresh lime juice&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl06_lblFormat"&gt;&lt;li&gt;1/2 small  red onion, finely chopped&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl07_lblFormat"&gt;&lt;li&gt;1 small  jalapeño pepper, finely chopped&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl08_lblFormat"&gt;&lt;li&gt;1 tablespoon  freshly grated orange peel&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl09_lblFormat"&gt;&lt;li&gt;4 cloves  garlic, finely chopped&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl10_lblFormat"&gt;&lt;li&gt;1 teaspoon  cumin seeds&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptIngredients_ctl11_lblFormat"&gt;&lt;li&gt;Salt and pepper&lt;/li&gt;&lt;/span&gt;&lt;/ol&gt;Directions:&lt;br /&gt;&lt;ol id="InstructionList"&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptInstructions_ctl01_lblFormat"&gt;&lt;li&gt;To prepare Citrus-Jalapeño Mojo, combine all mojo ingredients except salt and pepper in large saucepan; bring to a boil. Boil 15 to 20 minutes or until sauce is reduced to about 1-1/2 cups. Strain and discard solids. Season sauce with salt and black pepper, as desired. Set aside.&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptInstructions_ctl02_lblFormat"&gt;&lt;li&gt;Meanwhile, season beef steaks with black pepper, as desired. Place on grid over medium, ash-covered coals. Grill, covered, 11 to 14 minutes (over medium heat on preheated gas grill, covered, 12 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.&lt;/li&gt;&lt;/span&gt;&lt;span id="ctl00_ContentPlaceHolder1_MainDisplay1_rptInstructions_ctl03_lblFormat"&gt;&lt;li&gt;Carve steaks into thin slices. Season with salt, as desired. Drizzle with some Citrus-Jalapeño Mojo. Not a lot of marbling that Willy likes.&lt;br /&gt;&lt;br /&gt;Flat Iron steak is a cut that is thick on one end and is about 10 inches long tapering off to very thin.&lt;br /&gt;&lt;br /&gt;This allows to cook for about two to three people if some like rare and other like done.&lt;br /&gt;&lt;br /&gt;The steak is cooked for on very hot grill for about two minutes on each side.  This sears the steak very well and makes it look good.&lt;br /&gt;&lt;br /&gt;I then cook about 5 minutes more on each side. Willy done found this great mud pie recipe.  Here it is.&lt;br /&gt;&lt;/p&gt;              &lt;div class="entry-more"&gt;     &lt;p&gt;&lt;strong&gt;Mud Pie&lt;/strong&gt;&lt;br /&gt;&lt;em&gt;Chocolate wafer cookies are sold in the baking section of most supermarkets.&lt;/em&gt; &lt;/p&gt;  &lt;ul&gt;&lt;li&gt;1½ cups chocolate wafer cookies, crushed into tiny pieces&lt;/li&gt;&lt;li&gt;2 tablespoons melted butter&lt;/li&gt;&lt;li&gt;1 pint coffee ice cream, softened&lt;/li&gt;&lt;li&gt;1 tablespoon Kahlúa&lt;/li&gt;&lt;li&gt;1 tablespoon brandy&lt;/li&gt;&lt;li&gt;1 cup whipping cream, plus 2 tablespoons&lt;/li&gt;&lt;li&gt;½ cup dark corn syrup&lt;/li&gt;&lt;li&gt;12 ounces bittersweet or semisweet chocolate&lt;/li&gt;&lt;/ul&gt;    &lt;p&gt;Combine chocolate wafer cookies and butter and press into 9-inch pie plate. Place in freezer. Mix ice cream, Kahlúa and brandy. Whip 2 tablespoons whipping cream, fold in to ice cream mixture, and pour into pie shell. Cover and place in freezer. Meanwhile, bring 1 cup cream and corn syrup to a simmer in medium saucepan. Remove from heat. Add chocolate and whisk until smooth. Cool until lukewarm, about 20 minutes. Just finished a batch - I made em and they were good.&lt;br /&gt;&lt;br /&gt;2 C Sugar                        &lt;br /&gt;3T Cocoa                         &lt;br /&gt;1 Stick Margarine or Butter&lt;br /&gt;1/2 Cup Milk&lt;br /&gt;1/2 C Crunchy Peanut Butter&lt;br /&gt;3 C Oatmeal&lt;br /&gt;1 tsp vanilla.&lt;br /&gt;&lt;br /&gt;Mix 1st 4 ingredients an boil for 2 minutes.   Take from stove and add next 3 ingredients.  Mix Well. Really pretty good.&lt;br /&gt;&lt;br /&gt;2 tbsp chili powder&lt;br /&gt;2 tbsp packed brown sugar&lt;br /&gt;1 tbsp ground cumin&lt;br /&gt;2 tsp minced garlic&lt;br /&gt;2 tsp cider vinegar&lt;br /&gt;1 tsp Worcestershire sauce&lt;br /&gt;1/4 tsp ground red pepper&lt;br /&gt;&lt;br /&gt;Combine all ingredients in small bowl.  makes about 1/4 cup.&lt;br /&gt;&lt;br /&gt;Press rub evenly onto tender beef steaks before grilling -
