BSA is a standard size protein and is used regularly as a control to compare and determine concentrations of many different types of pure proteins. Peroxide generates free oxygen radicals that can be damaging to tissues.  Catalase along with other free radical scavengers and neutralizers converts peroxide into water and oxygen very efficiently.
