Able and Cole are an organic company who operate a delivery service whereby they deliver organic, locally grown and sourced, fruit and vegetable boxes plus a whole raft of other products.  All organic and all very tasty&lt;br /&gt;&lt;br /&gt;When I recieved my organic chicken, I was in a bit of a quandry as to what to do with it ... I have about half a dozen ideas for recipes I want to develop which involve chicken.  In the end I decided to feature various gluten free products and produce a simply roasted chicken&lt;br /&gt;&lt;br /&gt;&lt;a href="http://1.bp.blogspot.com/_AOm5IsVGJIw/SZ_EohKZHKI/AAAAAAAABXU/qCkXVDHoInA/s1600-h/_DSC6360.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 348px;" src="http://1.bp.blogspot.com/_AOm5IsVGJIw/SZ_EohKZHKI/AAAAAAAABXU/qCkXVDHoInA/s400/_DSC6360.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5305175086441503906" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;I roasted the chicken at the standard 20 minutes per pound, plus an extra 20 minutes.  35 minutes before the end of the cooking time I added pork, sage and buttered onion stuffing from &lt;a href="http://marksandspenser.com"&gt;Marks &amp; Spencer&lt;/a&gt;.  The gravy was made from Bisto Best gravy granules, if you want gravy granules for the times when you need gravy in a hurry, this is the one to go for, the joy of the brand being that it comes in a range of flavours.  The vegetables that went with it are all from my latest organic veggie box from Able and Cole&lt;br /&gt;&lt;br /&gt;&lt;a href="http://4.bp.blogspot.com/_AOm5IsVGJIw/SZ_EbQLdY2I/AAAAAAAABXM/c_gK-A4uFiA/s1600-h/_DSC6365.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 336px;" src="http://4.bp.blogspot.com/_AOm5IsVGJIw/SZ_EbQLdY2I/AAAAAAAABXM/c_gK-A4uFiA/s400/_DSC6365.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5305174858544276322" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;That wasn't to be the end of it!!!!  I had sandwiches the day after from the left-over chicken and made stock from the skin and bones, currently frozen and waiting for me to make some soup! Take another look at Dietary Specials!</title><content type='html'>Being a working girl, every now and again I rely on fast food.  Sometimes it's a question of having to!  When these occasions arise, it's usually a bit of a struggle to find something to eat ....&lt;br /&gt;&lt;br /&gt;However I often look at the gluten free range in Sainsbury's!  Imagine my suprise when I discoved in a local branch that the Dietary Specials range had expanded.  Either the range has expanded or the products that my local supermarket stocks has expanded, I'm not exactly sure which! He did have help and everything was prepared well in advance. The main course was a beautiful meal of various vegetables and various meats&lt;br /&gt;&lt;br /&gt;My son is a bit of a dab hand at cooking the famous Nigella Lawson Coca Cola Ham. He cooks this two or three times a year, and has done for the last three or so years. My son is an excellent cook and has modified this recipe over the years, the only problem is he wont tell me how he has modified it. It's all games here, I have to cook it myself and then he will tell me the modification(s)&lt;br /&gt;&lt;br /&gt;So I have duly cooked it myself, using a small gammon joint, with just one tiny modification ... so now I know the real modifications. Trust me, his coca cola ham is to die for&lt;br /&gt;&lt;br /&gt;This is a christmassy recipe with nice warm spices ... posted too late!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_AOm5IsVGJIw/SW-3Um7rZ4I/AAAAAAAABWs/MKeRVIWDOCs/s1600-h/_DSC6138_edited-1.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 258px;" src="http://3.bp.blogspot.com/_AOm5IsVGJIw/SW-3Um7rZ4I/AAAAAAAABWs/MKeRVIWDOCs/s400/_DSC6138_edited-1.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5291649651859744642" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;2 kg gammon joint&lt;br /&gt;2 litres coca cola (not diet)&lt;br /&gt;1 onion, peeled and chopped in half&lt;br /&gt;1 stick cinnamon&lt;br /&gt;12 whole cloves&lt;br /&gt;2 tbsp black treacle&lt;br /&gt;2 teaspoons mustard flour&lt;br /&gt;2 teaspoons dark brown sugar&lt;br /&gt;&lt;br /&gt;Place the gammon joint in a pan with the coca cola, cinnamon and onion, bring to the boil, then reduce heat to a slow simmer. Put a loose fitting lid on the pan. Cook for about two and a half hours or until the gammon is cooked through. Once the gammon is cooked it is usually referred to as 'ham'&lt;br /&gt;&lt;br /&gt;Remove gammon joint from the pan and place in a roasting tin, reserve the liquid from the pan, as this makes a useful sauce for other dishes&lt;br /&gt;&lt;br /&gt;Heat oven to a temperature of around 200 degrees&lt;br /&gt;&lt;br /&gt;Leave the ham to chill slightly and then remove the skin from the gammon joint. With a sharp knife, make slashes in the fat creating criss-cross diamond shapes. At the corners of the diamond shapes, push in the whole cloves. Drizzle the black treacle over the fat, then sprinkle the mustard flour and sugar over the treacle&lt;br /&gt;&lt;br /&gt;Roast for about 10 - 15 minutes or until you have a nice glaze on the fat&lt;br /&gt;&lt;br /&gt;This tastes gorgeous :)&lt;br /&gt;&lt;br /&gt;NB: the coca cola sauce that was reserved should be boiled down until it thickens and reduces in volume, it can then be used for a soup base or a barbecue sauce. I've been dreading the though of having this done, on the run-up, but decided not to put it off ... but to get it over and done with ...&lt;br /&gt;&lt;br /&gt;Believe me, it was nowhere near as bad as I thought it was going to be. As both of the teeth are on the same side, I now find myself having difficulties eating, over new year. What a time to be unable to eat, one of the big festivals of the calender. New Year's Eve dawns and I am on four hourly pain relief ...&lt;br /&gt;&lt;br /&gt;For everything there is an up-side, and the up-side of not being able to eat much over New Years Eve was a gorgeous mango smoothie on New years Day. I used to use Able and Cole, but cancelled my order some time ago&lt;br /&gt;&lt;br /&gt;I jumped at the chance to have the free organic box. Lovely fruits and veggies, they were lovely. A cholesterol nightmare! The celebrated Christmas lunch for twelve people is to be cooked by my son, age 23. He has to cope with his gluten issues and my gluten issues, so maybe not your traditional ingredients. We have managed to get gluten free gravy sorted out + a gluten free Christmas cake and pudding. We haven't done a huge amount of preparation for this gluten free Christmas feast, most of our gluten free alternatives have come from the high street, so to speak, as you can see!!&lt;br /&gt;&lt;br /&gt;Bread sauce - I don't like this, so haven't even tried to find an alternative&lt;br /&gt;Gravy - Bisto Best&lt;br /&gt;Stuffing - home made alternative based on rice&lt;br /&gt;Christmas Pudding - Sainsbury's&lt;br /&gt;Christmas Cake - Sainsbury's&lt;br /&gt;&lt;br /&gt;I also like a flavour of Italy with my Christmas, this crept into my Christmas experience about three years ago, so on the days leading up to Christmas I take a trip to Winchester News in Winchester. This is really a newspaper shop that has all sorts of Italian goodies. The man who runs this store shows me what he has in stock that is gluten free. I usually leave with a carrier bag laden with a 'Taste of Italy'. I've fiund a few new places to eat gluten free and a hotel that cater totally to the needs of a gluten free guest.  Inspirational or what.  I've successfully eaten gluten free meals in many restaurants across the globe, but unfortunately hotels have continued to be a bit more of a problem&lt;br /&gt;&lt;br /&gt;I ate loads of seafood while I was away ... well I was staying predominantly in Coastal regions.  This picture is of King scallops wrapped in bacon which I ate in a tiny inn sat right on a loch.  They were pretty good. I've been sort of planning in my head to create a fairly robust salad using chorizo and lentils. Unortunately the lentils didn't quite cut it, although in theory it sounded like quite a good idea ... or so I thought! &lt;br /&gt;&lt;br /&gt;I ended up with pinto beans and chorizo with sauteed onions .... turns out to be a good combination.  I'll have to work with this combination a bit, to see what else I can dream up!  In the meantime, here is my accidental chorizo and bean salad!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://1.bp.blogspot.com/_AOm5IsVGJIw/SJ8VMkKhSKI/AAAAAAAABCY/jVcZQ9O_NHk/s1600-h/_DSC4702.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://1.bp.blogspot.com/_AOm5IsVGJIw/SJ8VMkKhSKI/AAAAAAAABCY/jVcZQ9O_NHk/s400/_DSC4702.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5232924597638219938" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;100 g GF chorizo&lt;br /&gt;1 Spanish onion, diced&lt;br /&gt;1 tbsp olive oil&lt;br /&gt;Small can Pinto beans&lt;br /&gt;1/2 pepper, diced&lt;br /&gt;2 tbsp fresh parsley, chopped&lt;br /&gt;1- 2 tbsp dressing consisting of olive oil, lemon juice, salt and pepper&lt;br /&gt;2 - 3 handful ls of mixed salad leaves and herbs&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;To serve 2&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;In a small fry-pan on a low heat dry-fry the chorizo - the intention here is for the chorizo to render some of it's saturated fat, which my arteries don't need. Dispose of the fat.&lt;br /&gt;&lt;br /&gt;To the small fry-pan add 1 tbsp olive oil, add the onions and over a moderate heat fry them until they have softened and are taking on a brown colour&lt;br /&gt;&lt;br /&gt;Drain both the chorizo and the onions of excess oil on kitchen paper&lt;br /&gt;&lt;br /&gt;In a seperate bowl, add the pinto beans, peppers, half the parsley and half the chorizo / onion mix. That however is the stuff of dreams.  Before I ever got around to eating those little crabcakes with sweet chilli dipping sauce by the edge of the sea, the crabcakes were off limits until I could work out how to adapt them to being gluten free and I can no longer tolerate chilli!&lt;br /&gt;&lt;br /&gt;Big problem!  A leap into the unknown of will it work or wont it work!  It did and here are are my big crabcakes with no sweet chilli dipping sauce. Shape into six circular patties and place on a tray lined with greaseproof paper&lt;br /&gt;&lt;br /&gt;Place in the fridge and chill for at least an hour - this will help the crabcakes hold thier shape&lt;br /&gt;&lt;br /&gt;In a large fry-pan on medium heat, add enough oil to cover the base. The plan was to make a cornbread and crumble it all up for breadcrumbs to use in stuffing's, burgers and my up and coming meat-loaf. It does however give me a bit more of control over breads, that I am not familiar with baking!&lt;br /&gt;&lt;br /&gt;Crank the oven up to 180 degrees, use the butter wrapper to grease the cake tin as a precautionary measure to prevent the cornbread from sticking&lt;br /&gt;&lt;br /&gt;Combine all the dry ingredients in a large bowl, meanwhile slowly melt the butter in a small saucepan&lt;br /&gt;&lt;br /&gt;Make a well in the middle of the dry ingredients, add the eggs, butter and milk, stirring well with a wooden spoon. A belated 'Happy Independence Day' to those that celebrating it eeeerrrr yesterday! I got my dates mixed up and thought today was the fourth, so gathered my ingredients today instead of yesterday!&lt;br /&gt;&lt;br /&gt;However!&lt;br /&gt;&lt;br /&gt;Coleslaw is on the menu today! &lt;br /&gt;&lt;br /&gt;I have a long history of making my own coleslaw.  Going back nearly thirty years. I think my mother or father taught me how how to make it, so this is more than likely a handed down family tradition.  I've at some time or other produced everything from a classic slaw of cabbage. carrots and mayo to elaborate versions containing poppyseeds, cheese or variations with salad ingredients&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_AOm5IsVGJIw/SG-uGb7czdI/AAAAAAAABBc/8WdBMli2lUs/s1600-h/_DSC3497.jpg"&gt;&lt;img id="BLOGGER_PHOTO_ID_5219581918745251282" style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_AOm5IsVGJIw/SG-uGb7czdI/AAAAAAAABBc/8WdBMli2lUs/s400/_DSC3497.jpg" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;I have to sadly admit though, that I have never used a recipe as it is one of those things that is all based on the look and texture of the ingredients.  This coleslaw is no exception.  &lt;br /&gt;&lt;br /&gt;It consists of about a third of a medium sized white cabbage, finely sliced and sprinkled with salt to soften the cabbage, left for a while, then the resultant liquid drained.  To the softened cabbage I have added three peeled and grated carrots and half a red onion very finely diced.  The ingredients are then tossed together.  Mix into these ingredients spooonfuls of half fat mayonaise untill the right consistency is achieved.  Leave in a bowl for around an hour to allow the flavours to mingle&lt;br /&gt;&lt;br /&gt;There you have it .... So, it had to be something that was both quick and healthy with ingredients that I have in the house ... and here it is!&lt;br /&gt;&lt;br /&gt;I dont much go on the salad dressings available in the stores these days.  They often have gluten in them and a whole bunch of chemicals and I'm not into chemicals in my food anymore.  I had to chance my arm again and try and make my own dressing.  Boy, have I had some disasters over the last few years with salad dressings, but this one was good.  Sweet with a bite!  Just right!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_AOm5IsVGJIw/SGkGUEabyzI/AAAAAAAABBU/DrRN0qTS5AI/s1600-h/DSC04719.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://3.bp.blogspot.com/_AOm5IsVGJIw/SGkGUEabyzI/AAAAAAAABBU/DrRN0qTS5AI/s400/DSC04719.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5217708585137195826" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;130 g cubed pancetta&lt;br /&gt;300 g chicken diced &lt;br /&gt;1 tbsp olive oil&lt;br /&gt;1 tsp GF wholegrain mustard (make sure the mustard is GF)&lt;br /&gt;2 handful ls fresh rocket&lt;br /&gt;6 cherry tomatoes, halved&lt;br /&gt;&lt;br /&gt;Dressing&lt;br /&gt;&lt;br /&gt;2 tbsp olive oil&lt;br /&gt;1 tbsp lemon juice&lt;br /&gt;1 tbsp GF wholegrain mustard&lt;br /&gt;2 tbsp runney honey&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;To serve 2&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Make the dressing first by putting all the dressing ingredients into a screw-top jar, shake, then put the dressing in the fridge to chill slightly&lt;br /&gt;In a dry frying pan, add the pancetta, dry-fry on a low heat, to render up the fat from the pancetta and let the pancetta come to a golden colour. I've given in to his wishes, so here are cookies especially for a GF son!!!&lt;br /&gt;&lt;br /&gt;I've set myself a further challenge ... when don't I! I'm sure my son wont notice the difference! As I have elevated cholesterol, that I am trying to reduce. I don't fancy doing on life-long medication to reduce it! I am trying to reduce saturated fats in my diet. When it comes to baking, that means I am trying to replace butter (high in saturated fat) with sunflower oil. It has a knock on effect, when mixing up a recipe, sunflower oil produces a wetter mix than a butter mix, so I've added flour to counteract that. Even considering the extra flour, this is a very good cookie&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_AOm5IsVGJIw/SF4eVGZO4-I/AAAAAAAABBM/AI1CaipqzMw/s1600-h/DSC02743.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://3.bp.blogspot.com/_AOm5IsVGJIw/SF4eVGZO4-I/AAAAAAAABBM/AI1CaipqzMw/s400/DSC02743.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5214638766384145378" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;1/4 cup sunflower oil&lt;br /&gt;2 eggs, beaten&lt;br /&gt;1 1/4 cups vanilla castor sugar&lt;br /&gt;1 1/2 tsp baking soda&lt;br /&gt;1/2 cup gluten free flour mix &lt;br /&gt;1 cup crunchy peanut butter&lt;br /&gt;1/4 cup smooth peanut butter&lt;br /&gt;1/2 cup medium ground oats&lt;br /&gt;3/4 cup jumbo oats&lt;br /&gt;100g chocolate chips&lt;br /&gt;&lt;br /&gt;Heat the oven to 350 degrees&lt;br /&gt;&lt;br /&gt;Mix the sunflower oil and the egg together in a small jug&lt;br /&gt;&lt;br /&gt;Sieve the sugar and flour into a large bowl, add the baking soda and ground oats&lt;br /&gt;Add the peanut butters, mix to combine. Ad the egg and oil mix, stir to combine. Add the jumbo oats and chocolate chops, stir to combine&lt;br /&gt;&lt;br /&gt;This produces a fairly sticky dough. Take handfulls of dough and roll them into balls a bit more than an inch in diameter. Place on a baking sheet lined with baking parchment. Cook for 12 minutes or until just turning golden. I doubt very much if brownies had reached these shores at that time, if they had, I certainly hadn't heard of them!&lt;br /&gt;&lt;br /&gt;I was thinking of making some cookies for myself and my gluten-free son this week-end.  He is always trying to get me make GF cookies since I let him sample the Flourless peanut butter cookies which I jazzed up a few months ago.  Then I came across this recipe from Carol Fenster, cookies became brownies, which I have only adapted sligtly by using a healthier oil (sunflower oil which is heart-healthy). I was sold before I even started gathering the ingredients together. Mix untill well blended, add warm water or cofee and mix untill thoroughly combined. A wonderful place to go visiting this time of year!  I was unfortunately working so saw hardly anything, but my husband went out for a few hours with a camera, to take some pix&lt;br /&gt;&lt;br /&gt;On the way back, we were travelling in homeward, and just approaching Honiton, it was 5.30 in the afternoon, so getting a cup of tea in such a small market town was a bit of a long shot.  Honiton is one of those old fashioned towns, they are famous for their lace making and definately not the sort of place where you'd see a fast food joint, more a place for tea-rooms. His recipe includes chilli, but unfortunately due to quite severe reflux I cant tolerate it and also have to keep my food quite light on spice. This spice level works for me, but you may like to add a tad of chilli powder. I still use some of the recipes from that book to this day, but this book I believe would be a great addition to any gluten free cook's library, it includes all those dishes that you have avoided for ages, because they have small amounts of flour in sauces for example!&lt;br /&gt;&lt;br /&gt;This recipe is based on the Quick-Bread Foccacia on page 34. The only adaption I have made is to make rolls instead of one larger bread. I have also used a pre-mixed flour blend instead of using Carol's blend - both were similar!&lt;br /&gt;&lt;br /&gt;I will also make the Foccacia bread with yeast over the next couple of weeks, to compare the two! OK for me as I don't have a problem with yeast, but for those of you that do ... try this! So for some starts the battle to get as good a control as is possible&lt;br /&gt;&lt;br /&gt;For people in the UK struggling with any form of Epilepsy, there has always been somebody at the end of the phone for me at &lt;a href="http://www.epilepsy.org.uk/"&gt;Epilepsy Action&lt;/a&gt;. They provide leaflets and general information at all of the Neurological Centres of Excellence&lt;br /&gt;&lt;br /&gt;Sometimes the need for information can be strong, when it was strongest, I logged onto my computer, accessed the internet, and did a Google-search. Hey presto! I found Brain-Talk (now known as &lt;a href="http://neurotalk.psychcentral.com/"&gt;Neuro Talk&lt;/a&gt;). Neuro Talk is an online community for people with all sorts of neurological disorders, providing forums for people to communicate their problems and their solutions. It was here that I discovered that I wasn't the only mother isolated by chronic neurological disease in their child. They helped me to find a way through, both for myself and for my son. They also opened my eyes to the possibility of manipulating epilepsy with diet, which I duly did, a relaxed form of the Ketogenic Diet that was fairly low in Gluten&lt;br /&gt;&lt;br /&gt;The Ketogenic Diet is getting a lot of press here at the moment, due to the results of clinical trials in London. It is not new, it was developed in the 1920's. Paediatric epilepsy patients in the USA were using the diet, or a form of the diet at least ten years ago, that I know of, some with good results. It was developed to help with seizures in paediatric patients for whom seizure control is the most difficult. It is a very strict regime with increased levels of fats, normal levels of proteins and minimal levels of carbohydrates (naturally gluten low)&lt;br /&gt;&lt;br /&gt;If you want to know more about one woman's true life struggle with her son's epilepsy, you could do much worse than watch the film, &lt;strong&gt;First Do No Harm&lt;/strong&gt;, starring Meryl Streep. It follows a mothers journey from her sons diagnosis of a severe form of epilepsy through to the eventual trial on the Ketogenic Diet.  It is released by The Jaffe/Braunstein Films Ltd Production Company and I acquired it as a giveaway from the &lt;a href="http://www.dailymail.co.uk"&gt;Daily Mail&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://1.bp.blogspot.com/_AOm5IsVGJIw/SC6RPProinI/AAAAAAAAA_s/4RqNuYmy8cw/s1600-h/fdno.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://1.bp.blogspot.com/_AOm5IsVGJIw/SC6RPProinI/AAAAAAAAA_s/4RqNuYmy8cw/s400/fdno.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5201254310753110642" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I was as a result of the Ketogenic Diet and Neuro Talk, that I eventually started to resolve my own food issues. I knew I was ill at the time, but had other issues to deal with! As a result of being low in gluten on a relaxed form of the Ketogenic diet I released why I was being sick all the time. I still remember those days when I used to go to noodle bars in London and eat beautifull noodle dishes in stunning sauces, without giving a thought to food allergies.  Then along came food allergies!  And so I looked unsuccessfully for some good gluten free noodles, unsuccessfully!  That was then and this is now.  I have found some gluten free noodles&lt;br /&gt;&lt;br /&gt;So ...&lt;br /&gt;&lt;br /&gt;I have a few 250 g packs of buckwheat soba noodles, with the ingredients listed as buckwheat and salt only.  Although there is a rider that states 'may contain traces of gluten', which is standard UK to cover manufacturers against contamination as they use gluten containing products in other lines&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;If you cant get gluten free soba noodles and would like a pack, hook out your best noodles recipe, post it to your blog by 31st May. I don't even like eggs that much!&lt;br /&gt;&lt;br /&gt;My son is recovering and so am I, so I decided to make some granola (still only eating comfort food). Add the fruits and nuts, stir to combine. I've based it on those beefburgers that I used to eat in London in American Style diners make of virtually 100% beef, not that this is 100%, but I dont imagine it is far from it!&lt;br /&gt;&lt;br /&gt;I cant say beefburgers with a huge wadge of bread roll is something I miss, as I eat a lot lighter now than I did in my pre-GF diet days, but I have been thinking about doing a burger salad for a while. As I cut out the bread, I figure its ok to add the Caprese style salad rather than a salad of salad vegetables only &lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_AOm5IsVGJIw/SCN9ktmjPSI/AAAAAAAAA_U/JZydFdgTW8k/s1600-h/_DSC1144.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://3.bp.blogspot.com/_AOm5IsVGJIw/SCN9ktmjPSI/AAAAAAAAA_U/JZydFdgTW8k/s400/_DSC1144.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5198136464585735458" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Beefburgers &lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;500 g minced beef&lt;br /&gt;2 fat cloves garlic, chopped &lt;br /&gt;1/2 onion, finely chopped&lt;br /&gt;1 tbsp fresh thyme, chopped&lt;br /&gt;1 tbsp fresh basil, chopped&lt;br /&gt;1 egg, beaten&lt;br /&gt;salt and pepper&lt;br /&gt;&lt;br /&gt;Rocket leaves&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Caprese Salad&lt;/strong&gt;&lt;br /&gt;100 g small tomatoes, cut in half &lt;br /&gt;125 g ball of mozzarella&lt;br /&gt;Handful basil leaves, left whole&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Salad Dressing&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 tbsp lemon juice&lt;br /&gt;2 1/2 tbsp olive oil&lt;br /&gt;&lt;br /&gt;Make the beefburgers first by mixing all the ingredients in a large bowl, divide the mixture into four evenly shaped balls, pat the balls down to make a beefburger shape&lt;br /&gt;&lt;br /&gt;In a frying pan, add about one tbsp oil, add the beefburgers and fry on one side until you can see the meat starting to turn brown&lt;br /&gt;&lt;br /&gt;In the meantime, put the ingredients for the salad dressing into a screw-top container, shake well to mix&lt;br /&gt;&lt;br /&gt;By now the beefburgers should be cooked on one side, turn them over&lt;br /&gt;&lt;br /&gt;In the meantime, put the mozzarella, tomatoes and basil leaves into a salad bowl, add the salad dressing, and mix to combine&lt;br /&gt;&lt;br /&gt;Arrange the rocket leaves on two plates, add the caprese salad to one side of the plate. Recently though I found the &lt;a href="http://glutenfree-journey.blogspot.com/2008/03/peanut-butter-cookies-la-gluten-free.html"&gt;flour-less peanut butter cookie&lt;/a&gt; recipe, and other cookie recipes in &lt;a href="http://gluten-free-desserts.com/purchase.aspx"&gt;Mike's book&lt;/a&gt;. I loved the lightness of the flour-less peanut butter cookie and the chewiness of Mike's strawberry and chocolate cookies&lt;br /&gt;&lt;br /&gt;I had been thinking about adapting the flour-less peanut butter cookies to something more substantial, and then I saw &lt;a href="http://glutenfreemommy.com/chocolate-chunk-toffee-cookies/"&gt;Natalie's &lt;/a&gt;Jazzed Up Flour-less Peanut Butter Cookies.
