I liked the fact you could make ANY kind of Okanomiyaki. The best place was this place near my work in Kyoto. My favorite one was a ham and cheese one that had an American flag stuck on top. OMG, it was good. I went back about 10 years later and it was exactly the same.stephenehpetshttp://www.blogger.com/profile/07519395946787825125noreply@blogger.comtag:blogger.com,1999:blog-24294398.post-1555219531986147382008-11-30T06:57:00.000-08:002008-11-30T06:57:00.000-08:00Gaja in Lomita. I never see this on menus in my end of town and I totally suck at making it myself.

The trick to flipping pancakes and other flippable foods well is usually all in the pan. It takes practice, but the best way to flip really cleanly is to just whip the object up the side of the pan like it's going up a skate ramp, let it do a little airborne 180, and then meet it with the pan just as it flips. I'm not that good at it, but I can do it cleanly most of the time. The real trick is timing the meeting between the airborne food and the pan. It doesn't need to get dramatic, it should barely be out of contact with the pan.marshallhttp://www.marshallastor.comnoreply@blogger.comtag:blogger.com,1999:blog-24294398.post-33083661468621263792008-11-29T14:59:00.000-08:002008-11-29T14:59:00.000-08:00Get an electric griddle.
