Some of these are better than others, but they all raise the question: Is it legal to "copycat" recipes in this way?</span></p><p><span style="font-size:130%;">These days, with the music industry going after people who use file-sharing services to illegally post songs for others to copy, and with prominent anti-copying warnings from the FBI stuck on every movie DVD we rent or purchase, it's a natural question. People wonder if they are breaking some law by cloning a restaurant's most famous recipe-whether it's by passing around the instructions or by actually cooking and serving it to friends.</span></p><p><span style="font-size:130%;">Mind you, I'm no lawyer. But I've talked to a couple of lawyer friends as well as to a number of restaurant managers. The bottom line is this: If you cook up your favorite steak or lobster dish (or whatever) copied from Big Name Restaurant-even if it's an exact duplicate-you need not worry that a SWAT team is going to break down your door and haul you away. Set aside.<br /><br />When the soup is done, spoon about 1 cup into an oven−safe bowl. Float a crouton on top of the soup, then place a slice of provolone cheese on top of the crouton. Sprinkle 1/2 teaspoon of shredded parmesan cheese over the provolone. Place the bowl into your oven set to high broil. Broil the soup for 5 to 6 minutes or until the cheese is melted and starting to brown (you may need to broil longer if you are making more than one bowl at a time). Sprinkle an additional 1/2 teaspoon of shredded parmesan cheese over the top of the soup and serve. The marketing department decided they wanted to call the product "Colonel Sander's New Recipe" but the Colonel would have nothing to do with it.<br /><br />The stern and opinionated founder of the company who had publicly criticized the changes to his secret formulas (he called the revised mashed potatoes in a newspaper interview "wallpaper paste"), refused to allow the use of his name on the product. Since the Colonel was an important component of the company's marketing plan, KFC appeased him.<br /><br />The new chicken was then appropriately dubbed "Extra Crispy," and sales were finger-licking good. Now you can reproduce the taste and crunchy breaded texture of the real thing with a marinating process similar to that used by the huge fast-food chain, followed by a double-dipped coating. Unlike the Original Recipe chicken clone which is pressure-cooked in oil, this version is simply deep fried.<br /><br />1 whole frying chicken, cut up<br />6-8 cups vegetable oil<br /><br /><strong>Marinade:</strong><br />4 cups water<br />1 tablespoon salt<br />1/2 teaspoon MSG (see Tidbits)<br /><br /><strong>Coating:</strong><br />1 egg, beaten<br />1 cup milk<br />2 cups all-purpose flour<br />2 1/2 teaspoons salt<br />3/4 teaspoon pepper<br />3/4 teaspoon MSG<br /><br />1. Trim any excess skin and fat from the chicken pieces. Preheat the oil in a deep-fryer to 350 degrees.<br /><br />2. Combine the water, salt and MSG for the marinade in a large bowl. Add the chicken to the bowl and let it sit for 20 minutes. Turn the chicken a couple times as it marinates.<br /><br />3. Combine the beaten egg and milk in a medium bowl. In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).<br /><br />4. When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off. Working with one piece at a time, first coat the chicken with the dry flour mixture, then the egg and milk mixture, and then back into the flour. Be sure that each piece is coated very generously. Stack the chicken on a plate or cookie sheet until each piece has been coated.<br /><br />5. Drop the chicken, one piece at a time into the hot oil. Fry half of the chicken at a time (4 pieces) for 12-15 minutes, or until it is golden brown. You should be sure to stir the chicken around halfway through the cooking time so that each piece cooks evenly.<br /><br />6. Remove the chicken to a rack or towels to drain for about 5 minutes before eating. Serves 3-4 (8 pieces of chicken).<br /><br /><strong>Notes:</strong><br />MSG is Monosodium Glutamate, the solid form of a natural amino acid found in many vegetables. Preheat oil in deep fryer or deep pan over medium heat. You want the temperature of the oil to be around 350 degrees.<br /><br />2. Blend together all ingredients for dressing in a small bowl with an electric mixer. Put dressing in refrigerator to chill while you prepare the salad.<br /><br />3. In a small, shallow bowl beat egg, add milk, and mix well.<br /><br />4. In another bowl, combine flour with corn flake crumbs, salt and pepper.<br /><br />5. Cut chicken breast into 4 or 5 long strips. Dip each strip of chicken first into egg mixture then into the flour mixture, coating each piececompletely.<br /><br />6. Fry each chicken finger for 5 minutes or until coating has darkened tobrown.<br /><br />7. Prepare salad by tossing the chopped romaine with the chopped redcabbage, Napa cabbage, and carrots.<br /><br />8. Sprinkle sliced green onion on top of the lettuce.<br /><br />9. Sprinkle almonds over the salad, then the chow mein noodles.<br /><br />10. Cut the chicken into small bite-size chunks. Place the chicken onto the salad forming a pile in the middle.
