Mostly I think I am amazed because I managed to finish it in time for our event- after getting back into town at 1 pm the night before. So here it is, garnished with a sprig of mint on top for a little creative oomphf! (I also tossed chopped mint in the salad with balsamic vinegar and just a spoonful of sugar). It was also served with a bowl of organic vanilla yogurt to 'dallop' on top and chopped candied pecans & cranberries as well.
