It comes from South and Central America. Quinoa is high in protein.<br /><br />This recipe is with cooked quinoa is considered a fase 1 diabetes recipe, which means that all diabetes patients can eat it, even when on a strict raw food diet. It doesn't raise blood sugar.<br />This quinoa salad is great for lunch or dinner. You can make extra for the next day.<br />It gets even better after a few hours or a day in the fridge.<br /><br /><em>Ingredients for one person</em><br />1 cup quinoa<br />2 cups good quality water<br />1/2 bunch cilantro, basil or parsley, chopped<br />1 diced tomato<br />1 stalk of celery<br />1/2 avocado<br />1/4 t chili powder<br />2 t cumin<br />1/2 - 1 t Himalaya salt or sea salt<br />2 T olive oil<br />2 T lemon juice<br />optional 1/2 bell pepper and a clove of garlic<br /><br />Bring the quinoa and water to a boil.<br />Let is simmer for 15 minutes and cool down.<br />Mix all ingredients and enjoy this nutritious salad.Annet van Dorsserhttp://www.blogger.com/profile/17225603973479613016noreply@blogger.com0
